For the Seed Pasta
  • 8 ounces seed pasta any variety
  • 1 tablespoon salt for pasta water
  • 1/2 teaspoon ground black pepper to taste

  • 1/4 teaspoon red pepper flakes for added heat

Method
 

Making the Soup
  1. In a large pot, warm olive oil over medium heat until shimmering.
  2. Add chopped onion and garlic, sauté until onion turns translucent, about 4 minutes.
  3. Stir in fresh thyme (or rosemary) and pour in vegetable broth. Bring to a gentle simmer over medium-low heat, letting flavors meld for 5 minutes.
  4. Add white beans and stir thoroughly. Simmer gently for 10 minutes, then use an immersion blender to pulse until soup reaches a creamy yet slightly chunky texture.
Cooking the Seed Pasta
  1. Bring a large pot of salted water to a rolling boil (212°F).
  2. Add seed pasta and cook until al dente, about 8–10 minutes, stirring occasionally.
  3. Reserve a splash of pasta water, then drain the seed pasta well. Drizzle with a little olive oil to keep it separated and prevent sticking.
  4. Ladle the creamy soup into bowls, top each with a portion of seed pasta. Garnish as desired.
