Making the Soup
- In a large pot, warm olive oil over medium heat until shimmering.
- Add chopped onion and garlic, sauté until onion turns translucent, about 4 minutes.
- Stir in fresh thyme (or rosemary) and pour in vegetable broth. Bring to a gentle simmer over medium-low heat, letting flavors meld for 5 minutes.
- Add white beans and stir thoroughly. Simmer gently for 10 minutes, then use an immersion blender to pulse until soup reaches a creamy yet slightly chunky texture.
Cooking the Seed Pasta
- Bring a large pot of salted water to a rolling boil (212°F).
- Add seed pasta and cook until al dente, about 8–10 minutes, stirring occasionally.
- Reserve a splash of pasta water, then drain the seed pasta well. Drizzle with a little olive oil to keep it separated and prevent sticking.
- Ladle the creamy soup into bowls, top each with a portion of seed pasta. Garnish as desired.
