- Halve larger baby potatoes or keep small ones whole. Toss them with olive oil, crushed garlic, fresh rosemary, thyme, salt, and black pepper in a large bowl until evenly coated.
- Spread the seasoned potatoes in a single layer inside your slow cooker.
- Cover and cook on low for about 6 hours until tender.
- Switch to high, uncover, and cook for an additional 30 minutes to crisp up the edges.
