For the Chicken and Potatoes
  • 4 pieces Chicken thighs Use bone-in, skin-on for juicy, flavorful chicken
  • 1.5 pounds Baby potatoes Halved or quartered
  • 4 cloves Garlic Crushed
  • 2 tablespoons Olive oil For seasoning
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black pepper To taste
For the Finishing Touch
  • 1 cup Feta cheese Crumble before serving
  • 2 tablespoons Fresh parsley Chopped, for garnish

Steps
  1. Pat chicken thighs dry and rub with olive oil, oregano, salt, and pepper.
  2. Arrange baby potatoes in the slow cooker and drizzle with olive oil, oregano, salt, and pepper.
  3. Tuck garlic cloves into gaps, then drizzle lemon juice and sprinkle zest over.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until done.
  5. Sprinkle crumbled feta and chopped parsley over the dish before serving.
