Ingredients

For the Sauce:

  • Olive Oil: ¼ cup of good-quality extra-virgin olive oil.

  • Garlic: 4-6 large cloves, thinly sliced.

  • Red Pepper Flakes: ½ to 1 teaspoon, depending on your preferred heat level.

  • Canned Tomatoes: 1 (28-ounce) can of whole, peeled San Marzano tomatoes.

  • Kalamata Olives: ¾ cup, pitted and roughly chopped or halved.

  • Capers: 3 tablespoons, non-pareil, drained.

  • Caper Brine: 2 tablespoons of the brine from the jar of capers (this is the secret ingredient!).

  • Dried Oregano: 1 teaspoon.

For the Pasta and Garnish:

  • Pasta: 1 pound (16 ounces) of spaghetti, linguine, or bucatini.

  • Fresh Parsley: ½ cup, fresh Italian flat-leaf parsley, chopped.

  • Salt and Black Pepper: To taste.


Instructions

Step 1: Start the Pasta Water

Before you begin the sauce, fill a large pot with generously salted water and bring it to a boil. This way, your pasta can cook while the sauce simmers, ensuring perfect timing.

Step 2: Bloom the Aromatics

In a large, deep skillet or Dutch oven, heat the ¼ cup of olive oil over medium heat. Add the thinly sliced garlic and the red pepper flakes. Cook, stirring frequently, for about 1-2 minutes until the garlic is fragrant and just beginning to turn a pale golden color. Be very careful not to let the garlic burn, or it will become bitter. This step infuses the oil with flavor, creating the foundation for your sauce.

Step 3: Add the Tomatoes

Pour the entire can of whole San Marzano tomatoes and their juices into the skillet. Using the back of a wooden spoon or a potato masher, carefully crush the tomatoes directly in the pan. This gives you a rustic, chunky texture that is characteristic of a traditional Puttanesca sauce.

Step 4: Layer in the Briny Flavors

Stir in the chopped Kalamata olives, the drained capers, the 2 tablespoons of caper brine, and the dried oregano. Stir everything together and bring the sauce to a gentle simmer.

Step 5: Simmer the Sauce and Cook the Pasta

Once the sauce is simmering, reduce the heat to low, cover the pan partially (leaving a small gap for steam to escape), and let it simmer for at least 15-20 minutes. This allows the flavors to meld and deepen. While the sauce is simmering, add your pasta to the boiling water and cook according to package directions until it is al dente (firm to the bite).

Step 6: Combine the Pasta and Sauce

Just before the pasta is done cooking, use a mug or heatproof measuring cup to reserve about 1 cup of the starchy pasta water. Drain the pasta. Add the drained pasta directly to the skillet with the sauce. Add about half of the chopped fresh parsley.

Step 7: Emulsify and Finish

Toss the pasta and sauce together over low heat for about a minute. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it and help it cling to every strand of pasta. The starch in the water will emulsify with the oil, creating a silky, cohesive sauce rather than a watery one. Continue adding pasta water a little at a time until you reach your desired consistency.

Step 8: Serve

Taste the pasta and season with a pinch of salt (if needed, as the olives and capers are already salty) and freshly ground black pepper. Divide among four bowls, garnish with the remaining fresh parsley, and serve immediately.
