Instructions
Step 1: Prepare Your Ingredients (Mise en Place)
This is the most crucial part of a smooth assembly.
-
Cook the Bacon: Cook your bacon until it is very crispy and drain it on a paper towel-lined plate. The oven method (400°F / 200°C on a wire rack for 15-20 minutes) is highly recommended.
-
Toast the Bread: Toast all 6 slices of bread to a perfect, even golden brown. Arrange them on your work surface.
-
Prep the Veggies: Wash and dry your lettuce leaves. Slice your tomato and lightly salt and pepper the slices.
-
Make the Avocado Spread: In a small bowl, combine the flesh of one avocado, the lime or lemon juice, salt, and pepper. Use a fork to mash it into a spread that is mostly smooth but still has some small chunks for texture. The citrus juice is essential to prevent the avocado from browning.
Step 2: The First Layer of Assembly
Take three slices of the toasted bread. Spread a thin layer of mayonnaise on one side of each slice. Working with the first slice (the bottom layer), place two leaves of lettuce on the mayonnaise to create a barrier. Top the lettuce with the tomato slices.
Step 3: The Second Layer
Take the second slice of toasted bread and place it, mayo-side down, on top of the tomatoes. Spread half of the creamy avocado spread evenly over the top of this middle slice of bread.
Step 4: The Protein Layers
Fold and layer half of the sliced turkey (about 1/4 lb) on top of the avocado spread. You want to create some height and texture, not just lay it flat. Place four slices of the crispy bacon on top of the turkey, breaking them in half if necessary to fit.
Step 5: The Final Layer
Take the third and final slice of toasted bread and place it, mayo-side down, on top of the bacon to complete the sandwich. Gently press down on the entire sandwich to compact the layers slightly.
Step 6: Secure and Slice
This is the signature club sandwich technique. Take two long frilled toothpicks and insert them through the sandwich, one in the top-right quadrant and one in the bottom-left quadrant. This will hold all the layers together securely.
Using a long, sharp serrated knife, slice the sandwich in half diagonally, from corner to corner, cutting right through the middle of where your toothpicks are not. Then, slice the two halves again diagonally to create four triangular quarters. Each quarter should be held together by a toothpick.
Step 7: Repeat and Serve
Repeat the entire assembly process with the remaining ingredients to make the second sandwich. Serve immediately.
