- 9 oz refrigerated cheese tortellini
- 8 strips turkey bacon, chopped
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup fresh parsley, chopped
Instructions
- Cook the Tortellini:
- Boil salted water in a large pot.
- Cook tortellini as per package instructions.
- Drain and save a little pasta water for later use.
- Prepare the Turkey Bacon:
- In a skillet over medium heat, cook the chopped turkey bacon until crispy, about 5-7 minutes.
- Use a slotted spoon to transfer the bacon to a paper towel to drain excess fat.
- Sauté the Garlic:
- Keep 1 tablespoon of bacon fat in the skillet; discard the rest.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Make the Sauce:
- Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
- Add grated Parmesan cheese, stirring until melted and the sauce thickens.
- Combine Ingredients:
- Mix in chopped parsley and crispy bacon, reserving some bacon for garnish.
- Toss cooked tortellini in the sauce. Add reserved pasta water if the sauce is too thick.
- Cook for another 1-2 minutes to ensure everything is well-coated.
- Serve:
- Serve hot, garnished with remaining bacon bits and extra parsley.
