  • 9 oz refrigerated cheese tortellini
  • 8 strips turkey bacon, chopped
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup fresh parsley, chopped

Instructions

  1. Cook the Tortellini:

    • Boil salted water in a large pot.
    • Cook tortellini as per package instructions.
    • Drain and save a little pasta water for later use.

  2. Prepare the Turkey Bacon:

    • In a skillet over medium heat, cook the chopped turkey bacon until crispy, about 5-7 minutes.
    • Use a slotted spoon to transfer the bacon to a paper towel to drain excess fat.

  3. Sauté the Garlic:

    • Keep 1 tablespoon of bacon fat in the skillet; discard the rest.
    • Add minced garlic to the skillet and sauté for 1 minute until fragrant.

  4. Make the Sauce:

    • Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
    • Add grated Parmesan cheese, stirring until melted and the sauce thickens.

  5. Combine Ingredients:

    • Mix in chopped parsley and crispy bacon, reserving some bacon for garnish.
    • Toss cooked tortellini in the sauce. Add reserved pasta water if the sauce is too thick.
    • Cook for another 1-2 minutes to ensure everything is well-coated.

  6. Serve:

    • Serve hot, garnished with remaining bacon bits and extra parsley.
