Sweet and Sour Beef Stir Fry recipe

  • Author: Sophia

Ingredients

Scale

For the Beef Marinade:

    • 1 pound Beef Sirloin or Flank Steak: Sirloin is a great choice for stir-fries as it’s relatively lean and tender. Flank steak also works well, offering a richer beefy flavor. Look for a cut that is about ½ to ¾ inch thick for optimal stir-frying.

    • 1 tablespoon Soy Sauce: Low-sodium soy sauce is recommended to control the saltiness of the dish. Soy sauce adds umami and depth of flavor to the beef.

    • 1 tablespoon Rice Wine (Shaoxing Wine) or Dry Sherry: Rice wine or dry sherry adds a subtle sweetness and complexity, helping to tenderize the beef and enhance its flavor. If you don’t have either, you can substitute with a tablespoon of water or chicken broth.

    • 1 teaspoon Cornstarch: Cornstarch is crucial for creating that tender, velvet-like texture on the beef. It also helps the marinade adhere to the beef during stir-frying.

    • ½ teaspoon Ground Ginger: Ginger adds warmth and a slightly spicy kick to the marinade, complementing the other flavors beautifully. Freshly grated ginger is even better if you have it on hand.

    • ¼ teaspoon White Pepper: White pepper has a more delicate and earthy flavor compared to black pepper, making it ideal for Asian-inspired dishes. If you don’t have white pepper, black pepper can be substituted.

For the Sweet and Sour Sauce:

    • ½ cup Pineapple Juice: Pineapple juice is the key to the authentic sweet and sour flavor. Use unsweetened pineapple juice to control the sweetness of the sauce. Fresh pineapple juice is even better if you can make it!

    • ¼ cup Rice Vinegar: Rice vinegar provides the essential sour element in the sauce. It has a milder and slightly sweeter flavor compared to white vinegar. Apple cider vinegar can be used as a substitute in a pinch.

    • ¼ cup Soy Sauce: Again, low-sodium soy sauce is preferred to control the saltiness.

    • ¼ cup Ketchup: Ketchup adds sweetness, tanginess, and a vibrant red color to the sauce. It also contributes to the sauce’s glossy texture.

    • 2 tablespoons Brown Sugar: Brown sugar adds a rich, caramel-like sweetness that balances the sourness of the vinegar and pineapple juice. You can use light or dark brown sugar depending on your preference for sweetness and molasses flavor.

    • 1 tablespoon Cornstarch: Cornstarch acts as a thickening agent, creating a luscious, glossy sauce that coats the beef and vegetables perfectly.

    • 1 tablespoon Sesame Oil: Sesame oil adds a nutty aroma and flavor to the sauce, enhancing its complexity and making it even more delicious. Toasted sesame oil is preferred for its richer flavor.

For the Stir Fry:

    • 2 tablespoons Vegetable Oil: Vegetable oil or canola oil are good choices for stir-frying due to their high smoke point and neutral flavor.

    • 1 medium Yellow Onion: Cut into wedges or chunks. Yellow onions provide a mild, sweet flavor that complements the other ingredients.

    • 2 cloves Garlic: Minced. Garlic adds a pungent, savory note that is essential for stir-fries. Freshly minced garlic is always best.

    • 1 inch Ginger: Peeled and thinly sliced or minced. Fresh ginger provides a vibrant, aromatic flavor that is crucial for authentic stir-fry taste.

    • 1 Red Bell Pepper: Cut into bite-sized pieces. Red bell pepper adds sweetness, color, and a satisfying crunch.

    • 1 Green Bell Pepper: Cut into bite-sized pieces. Green bell pepper provides a slightly more bitter and grassy flavor, adding complexity to the vegetable mix.

    • 1 cup Fresh Pineapple Chunks: Fresh pineapple is highly recommended for its bright, tangy sweetness and juicy texture. Canned pineapple chunks in juice (drained) can be used as a substitute, but fresh pineapple is superior.

    • Optional Vegetables: You can customize your stir fry by adding other vegetables you enjoy, such as broccoli florets, carrots (sliced thinly), snow peas, snap peas, or bamboo shoots.

For Garnish (Optional but Recommended):

    • Sesame Seeds: Toasted sesame seeds add a nutty flavor and visual appeal.

    • Chopped Green Onions: Fresh green onions add a pop of color and a mild oniony flavor.

Instructions

Step 1: Marinate the Beef (Minimum 30 Minutes, Ideally Longer)

    1. Slice the beef: Partially freeze the beef for about 20-30 minutes to make it easier to slice thinly against the grain. Slice the beef into thin strips, about ¼ inch thick and 1-2 inches long. Slicing against the grain ensures tenderness.

    1. Combine marinade ingredients: In a medium bowl, combine the soy sauce, rice wine (or dry sherry), cornstarch, ground ginger, and white pepper. Whisk until smooth.

    1. Marinate the beef: Add the sliced beef to the marinade and toss to coat evenly. Marinate for at least 30 minutes, or up to several hours in the refrigerator for even more tender and flavorful beef. The longer the beef marinates, the more tender it will become.

Step 2: Prepare the Sweet and Sour Sauce

    1. Whisk sauce ingredients: In a small bowl, whisk together the pineapple juice, rice vinegar, soy sauce, ketchup, brown sugar, cornstarch, and sesame oil until smooth. Ensure the cornstarch is fully dissolved to prevent lumps in the sauce. Set aside.

Step 3: Stir Fry the Beef

    1. Heat your wok or large skillet: Heat a wok or large skillet over high heat until it is very hot. A hot wok is crucial for achieving that signature stir-fry char and preventing the beef from steaming.

    1. Add oil: Add 1 tablespoon of vegetable oil to the hot wok and swirl to coat the bottom and sides.

    1. Stir fry the beef in batches: Add half of the marinated beef to the hot wok in a single layer (avoid overcrowding). Stir fry quickly and continuously for 2-3 minutes, or until the beef is browned on the outside but still slightly pink inside. Remove the beef from the wok and set aside. Repeat with the remaining beef and another tablespoon of vegetable oil. Cooking in batches prevents overcrowding, which lowers the temperature of the wok and can result in steamed rather than stir-fried beef.

Step 4: Stir Fry the Vegetables

    1. Stir fry aromatics: Add the onion wedges to the wok and stir fry for 2-3 minutes, until slightly softened and fragrant.

    1. Add garlic and ginger: Add the minced garlic and ginger to the wok and stir fry for another minute, until fragrant. Be careful not to burn the garlic.

    1. Add bell peppers: Add the red and green bell pepper pieces to the wok and stir fry for 3-4 minutes, until they are crisp-tender. You want them to retain some crunch.

    1. Add pineapple: Add the fresh pineapple chunks to the wok and stir fry for another minute, just to heat them through.

Step 5: Combine and Sauce

    1. Return beef to the wok: Return the stir-fried beef to the wok with the vegetables.

    1. Pour in the sauce: Pour the prepared sweet and sour sauce over the beef and vegetables.

    1. Simmer and thicken: Bring the sauce to a simmer and cook, stirring constantly, for 1-2 minutes, or until the sauce thickens and becomes glossy. The cornstarch in the sauce will activate and thicken it quickly.

    1. Toss to coat: Toss everything together to ensure the beef and vegetables are evenly coated in the luscious sweet and sour sauce.

Step 6: Serve and Garnish

    1. Serve immediately: Serve the Sweet and Sour Beef Stir Fry immediately over hot cooked rice (white rice, brown rice, or jasmine rice are all great choices).

    1. Garnish (optional): Garnish with toasted sesame seeds and chopped green onions for added flavor and visual appeal.
