Strawberry Soup recipe

Ingredients

  • Fresh Strawberries: 1 lb (about 4 cups), washed, hulled, and preferably sliced or quartered (especially if your blender isn’t high-powered). Use ripe, sweet, fragrant strawberries for the best flavor.
  • Orange Juice: 1/2 cup, preferably fresh-squeezed, or good quality pulp-free store-bought. Adds liquid for blending and a complementary citrus note.
  • Lemon Juice: 1 tablespoon, fresh-squeezed. Crucial for brightening the flavors and adding a necessary tang to balance the sweetness. Lime juice can also be used.
  • Sweetener (Optional, to taste): 1-3 tablespoons granulated sugar, honey, maple syrup, or agave nectar. The amount depends entirely on the sweetness of your berries and your personal preference. Start with less; you can always add more.
  • Vanilla Extract: 1/2 teaspoon (optional, but recommended). Adds a subtle warmth and depth that complements the strawberries beautifully.
  • Pinch of Salt: Just a tiny pinch enhances the overall flavors and sweetness.

Instructions

Step 1: Prepare the Strawberries

  • Thoroughly wash the fresh strawberries under cold running water.
  • Gently pat them dry with paper towels or a clean kitchen towel.
  • Remove the green leafy tops (hull them). You can use a small paring knife or a strawberry huller.
  • Slice or quarter the strawberries. This helps them blend more easily and ensures a smoother consistency, especially if not using a high-speed blender.

Step 2: Combine Ingredients

  • Place the prepared strawberries into the jar of your blender.
  • Add the orange juice, fresh lemon juice, vanilla extract (if using), and a pinch of salt.
  • If adding optional creamy elements like yogurt or heavy cream, add them now. If adding optional flavorings like mint/basil leaves or zest, add them now too.
  • Add your chosen sweetener (sugar, honey, etc.), starting with the smallest amount suggested (e.g., 1 tablespoon). You can always adjust later.

Step 3: Blend Until Smooth

  • Secure the lid on the blender.
  • Start blending on a low speed, gradually increasing to high.
  • Blend for 30-60 seconds, or until the mixture is completely smooth and puréed. If needed, stop the blender and scrape down the sides with a spatula to ensure everything is incorporated.
  • Optional: If you prefer an ultra-smooth, seedless soup, you can strain the purée through a fine-mesh sieve into a bowl, using a spatula to press the liquid through. Discard the solids left in the sieve. This step is purely based on texture preference.

Step 4: Taste and Adjust

  • Carefully taste the blended soup. Consider that flavors, especially sweetness, become slightly muted when chilled.
  • Does it need more sweetness? Add another teaspoon or tablespoon of sweetener and blend briefly.
  • Does it need more brightness or tang? Add another squeeze of lemon juice (start with 1/2 tsp) and blend.
  • Adjust seasonings until the flavor balance is to your liking – vibrant, fresh, slightly sweet, and slightly tangy.

Step 5: Chill Thoroughly

  • Pour the Strawberry Soup into an airtight container or a bowl covered tightly with plastic wrap.
  • Refrigerate for at least 2 hours, but ideally 4 hours or even overnight. Chilling is absolutely essential not only for the soup to be served cold but also for the flavors to meld and fully develop. The soup will also thicken slightly as it chills.

Step 6: Serve

  • Once thoroughly chilled, give the soup a quick stir before serving, as some separation might occur.
  • Ladle or pour the soup into chilled bowls, small glasses, or cups.
  • Garnish as desired (see “How to Serve” section below). Serve immediately.
