Instructions

    1. Prepare the Chuck Roast and Vegetables: Pat the chuck roast dry with paper towels. This is important for achieving a good sear. Season the roast generously on all sides with salt and black pepper. Chop the onion, carrots, and celery into roughly 1-inch pieces. Mince or roughly chop the garlic.

    1. Sear the Chuck Roast: Heat olive oil (or vegetable oil) in a large skillet or Dutch oven over medium-high heat until it is shimmering. Carefully place the chuck roast in the hot skillet and sear on all sides until deeply browned, about 3-4 minutes per side. Searing is crucial as it creates a flavorful crust and locks in juices, enhancing the overall taste and texture of the roast. Don’t overcrowd the pan; sear in batches if necessary to ensure proper browning. Once seared, remove the roast from the skillet and set aside.
