Slow Cooker Chicken Drumsticks

Ingredients

  • Chicken Drumsticks: 3 lbs (about 10-12 drumsticks), skin-on or skin-removed (see notes).
  • Your Favorite BBQ Sauce: 1.5 to 2 cups (choose a quality bottled sauce, or use your homemade recipe).
  • Onion: 1 medium yellow onion, thinly sliced or roughly chopped (optional, adds flavour base).
  • Garlic: 3-4 cloves, minced (optional, enhances flavour).
  • Seasonings for Chicken:

    • Salt: 1 teaspoon
    • Black Pepper: 1/2 teaspoon
    • Garlic Powder: 1 teaspoon
    • Onion Powder: 1 teaspoon
    • Smoked Paprika: 1 teaspoon (adds depth and colour)

  • Optional Sauce Enhancements:

    • Worcestershire Sauce: 1 tablespoon
    • Apple Cider Vinegar: 1 tablespoon (adds tang)
    • Brown Sugar or Honey: 1-2 tablespoons (if your BBQ sauce isn’t very sweet, or you like it sweeter)
    • Liquid Smoke: 1/4 – 1/2 teaspoon (for extra smoky flavour, use sparingly)

  • For Thickening Sauce (Optional):

    • Cornstarch: 1-2 tablespoons
    • Cold Water: 2-4 tablespoons

  • For Serving (Optional):

    • Fresh Parsley or Cilantro, chopped

Ingredient Notes:

  • Skin On or Off: Leaving the skin on adds flavour and helps keep the meat moist during cooking. However, skin cooked entirely in the slow cooker will be soft, not crispy. You can remove it before cooking if preferred, or remove it after cooking before serving. For crispy skin, see the finishing step in the instructions.
  • BBQ Sauce: The quality and flavour profile of your BBQ sauce will significantly impact the final dish. Use one you genuinely enjoy.

Instructions

  1. Prepare the Chicken: Pat the chicken drumsticks thoroughly dry with paper towels. This helps seasonings adhere better and is crucial if you plan to brown the skin later.
  2. Season the Chicken: In a small bowl, combine the salt, black pepper, garlic powder, onion powder, and smoked paprika. Sprinkle the seasoning mix evenly over all sides of the drumsticks, rubbing it in gently.
  3. Prepare the Slow Cooker: If using onion and garlic, scatter the sliced onion and minced garlic evenly across the bottom of your slow cooker insert. This creates a flavourful base for the chicken to rest on.
  4. Combine Sauce (Optional Enhancements): If using just bottled BBQ sauce, you can skip this step. If enhancing your sauce, pour the BBQ sauce into a medium bowl. Whisk in any optional additions like Worcestershire sauce, apple cider vinegar, brown sugar/honey, or liquid smoke until well combined.
  5. Add Chicken and Sauce: Arrange the seasoned drumsticks in the slow cooker on top of the onions (if using). Try to arrange them in a relatively even layer, although some overlap is usually necessary. Pour the BBQ sauce (enhanced or plain) evenly over the chicken drumsticks. Gently turn the drumsticks with tongs to ensure they are mostly coated in sauce.
  6. Cook: Secure the lid on the slow cooker. Cook on LOW for 4-6 hours or on HIGH for 2-3 hours. Low heat generally yields more tender results. Chicken is done when it is cooked through, tender, and reaches an internal temperature of at least 165°F (74°C) measured with a meat thermometer in the thickest part, avoiding the bone. The meat should easily pull away from the bone.
  7. Optional Finishing Step for Browning/Crisping Skin: Slow cooker chicken skin will be soft. If you desire a crispier skin and caramelized sauce (highly recommended for texture and appearance):

    • Broiler Method: Carefully remove the cooked drumsticks from the slow cooker using tongs and place them on a baking sheet lined with foil or parchment paper. Brush them generously with extra sauce from the slow cooker. Place the baking sheet under your oven’s broiler (set to high) for 3-5 minutes, watching very closely to prevent burning. Broil until the sauce is bubbly and slightly caramelized, and the skin is browned to your liking.
    • Pan-Sear Method: Heat a tablespoon of oil in a large skillet over medium-high heat. Carefully place the cooked drumsticks in the hot skillet. Sear for 1-2 minutes per side until the skin is lightly browned and crisped. You can brush with extra sauce during the last minute.

  8. Thicken Sauce (Optional): While the chicken rests or broils, if you find the sauce in the slow cooker too thin, you can thicken it. Skim off any excess fat from the surface. In a small bowl, whisk together the cornstarch and cold water until smooth (this is a slurry). Pour the slurry into the sauce remaining in the slow cooker. Stir well. Turn the slow cooker to HIGH (if not already on it) and cook, stirring occasionally, for 10-15 minutes, or until the sauce has thickened. Alternatively, pour the sauce into a saucepan and simmer on the stovetop with the slurry, stirring until thickened (this is faster).
  9. Serve: Serve the tender chicken drumsticks immediately, spooning the warm sauce (thickened or unthickened) over the top. Garnish with fresh chopped parsley or cilantro, if desired.
