Instructions

- Sear the Beef (Optional but Recommended): While searing is optional, it significantly enhances the flavor of the beef. Heat a large skillet over medium-high heat with a tablespoon of olive oil or vegetable oil. Sear the beef roast on all sides until nicely browned, about 2-3 minutes per side. Searing creates a flavorful crust and locks in juices. If you skip searing, the recipe will still be delicious, but searing adds an extra layer of depth.
- Assemble in the Slow Cooker: Place the sliced onions in the bottom of your slow cooker. Place the seared (or unseared) beef roast on top of the onions. Sprinkle the minced garlic over the beef.
- Combine Sauce Ingredients: In a medium bowl, whisk together the BBQ sauce, beef broth, apple cider vinegar, Worcestershire sauce, brown sugar, smoked paprika, chili powder, garlic powder, onion powder, and dried mustard powder.
- Pour Sauce over Beef: Pour the BBQ sauce mixture over the beef roast in the slow cooker, ensuring the beef is mostly submerged.
