Roasted Garlic Raspberry Salad recipe

Ingredients

    • Garlic: 1 whole head of garlic. Choose a firm head with plump cloves.

    • Olive Oil: 1-2 teaspoons, extra virgin recommended.

    • Salt & Pepper: Pinch of each, for seasoning before roasting.

For the Raspberry Vinaigrette (incorporating Roasted Garlic):

    • Roasted Garlic Cloves: 4-6 cloves (from the roasted head), mashed into a paste. Adjust amount based on garlic head size and personal preference.

    • Fresh Raspberries: 1/2 cup (about 60g), plus more for garnish/salad. Slightly soft or bruised raspberries are perfect for the dressing.

    • Olive Oil: 1/3 cup (80ml), good quality extra virgin.

    • Red Wine Vinegar or Raspberry Vinegar: 3 tablespoons. Raspberry vinegar enhances the berry flavour, while red wine vinegar provides a classic tang. Apple cider vinegar can also work.

    • Dijon Mustard: 1 teaspoon. Acts as an emulsifier and adds a subtle kick.

    • Honey or Maple Syrup: 1-2 teaspoons, or to taste. Balances the tartness of the raspberries and vinegar. Adjust based on raspberry sweetness.

    • Salt: 1/4 teaspoon, or to taste.

    • Black Pepper: 1/8 teaspoon, freshly ground, or to taste.

For the Salad Base:

    • Mixed Greens: 5-6 oz (about 140-170g) bag/container. A mix including baby spinach, arugula (rocket), and other tender lettuces works beautifully. Arugula adds a nice peppery contrast.

    • Fresh Raspberries: 1 cup (about 120g). Use firm, fresh berries for the salad itself.

    • Goat Cheese (Chèvre): 1/2 cup (about 60-75g), crumbled. Creamy, tangy goat cheese is a classic pairing with raspberries. Feta or even blue cheese could be substituted for different flavour profiles.

    • Almonds: 1/3 cup (about 45g), sliced or slivered, toasted. Provides essential crunch and nutty flavour. Pecans or walnuts are excellent substitutes.

    • Red Onion (Optional): 1/4 small red onion, very thinly sliced. Adds a sharp bite; soak in ice water for 10 minutes to mellow the flavour if desired.

Optional Additions for a Main Course Salad:

    • Grilled Chicken Breast: 1-2 breasts, sliced.

    • Grilled Shrimp: 8-12 large shrimp.

    • Pan-Seared Salmon: 1-2 fillets, flaked.

    • Chickpeas: 1 can (15 oz), rinsed and drained.

    • Avocado: 1 ripe avocado, sliced or diced.


Instructions

    1. Preheat Oven: Preheat your oven to 200°C (400°F).

    1. Prepare Garlic: Slice off the top 1/4 to 1/2 inch of the garlic head, exposing the tops of the cloves. Leave the skin on the rest of the head intact.

    1. Season: Place the garlic head cut-side-up on a small piece of aluminum foil. Drizzle the exposed cloves with 1-2 teaspoons of olive oil, letting it seep down slightly. Sprinkle with a small pinch of salt and pepper.

    1. Wrap: Wrap the garlic head loosely but securely in the aluminum foil.

    1. Roast: Place the foil-wrapped garlic directly on the oven rack or on a small baking sheet. Roast for 40-60 minutes. Roasting time varies depending on the size and freshness of the garlic. It’s ready when the cloves are very soft, tender, and lightly golden/caramelized when gently squeezed or pierced with a fork. The aroma will be sweet and mellow.

    1. Cool and Extract: Carefully remove the garlic from the oven and let it cool slightly until comfortable to handle. Once cooled, simply squeeze the base of the garlic head, and the soft, roasted cloves should pop out easily. Alternatively, use a small fork or knife to scoop them out. You’ll need 4-6 cloves for the dressing; reserve any extras for other uses (spreading on bread, adding to sauces, etc.).

Part 2: Preparing the Roasted Garlic Raspberry Vinaigrette

    1. Mash Garlic: In a small bowl, use a fork to mash the 4-6 reserved roasted garlic cloves into a smooth paste. The roasted garlic should be soft enough to mash easily.

    1. Muddle Raspberries: Add the 1/2 cup of fresh raspberries designated for the dressing to the bowl with the garlic paste. Gently muddle (mash) them with the fork. Don’t obliterate them completely; some small pieces are fine.

    1. Combine Wet Ingredients: Whisk in the olive oil, red wine vinegar (or raspberry vinegar), Dijon mustard, and honey (or maple syrup).

    1. Emulsify: Whisk vigorously until the dressing emulsifies and becomes slightly creamy and well combined. The oil should incorporate smoothly with the vinegar and raspberry juices.

    1. Season: Season with salt and freshly ground black pepper to taste. Whisk again.

    1. Taste and Adjust: Taste the vinaigrette. Adjust sweetness (honey/maple), acidity (vinegar), or seasoning (salt/pepper) as needed. Roasted garlic intensity can vary, so add more mashed cloves if you want a stronger garlic flavour.

    1. Strain (Optional): For a smoother dressing without raspberry seeds, you can press the vinaigrette through a fine-mesh sieve. However, leaving the seeds in provides extra texture and fibre.

Part 3: Assembling the Roasted Garlic Raspberry Salad

    1. Toast Nuts (if not already toasted): Place sliced or slivered almonds in a dry skillet over medium-low heat. Toast, shaking the pan frequently, for 3-5 minutes, or until fragrant and lightly golden. Watch carefully as they can burn quickly. Remove immediately from the pan to cool.

    1. Prepare Greens: Place the mixed greens in a large salad bowl. If using optional red onion, add the thinly sliced pieces now.

    1. Add Toppings: Gently scatter the 1 cup of fresh, whole raspberries and the toasted almonds over the greens. Crumble the goat cheese evenly over the top.

    1. Dress the Salad: Drizzle about half to two-thirds of the Roasted Garlic Raspberry Vinaigrette over the salad. Gently toss the salad until the leaves are lightly coated. Be careful not to overdress initially – you can always add more dressing, but you can’t take it away. Overdressing can make the delicate greens soggy.

    1. Serve: Transfer the salad to a serving platter or individual plates. If desired, drizzle with a little more dressing and garnish with a few extra fresh raspberries or a sprinkle of black pepper. If adding optional protein (chicken, shrimp, salmon, chickpeas) or avocado, arrange them on top of the salad after tossing. Serve immediately for the best texture and freshness.
