Ingredients
Scale
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for dusting)
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup finely chopped almonds
- 1/2 cup raspberry jam
Instructions
1. Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper to prevent sticking.
2. Make the Dough
- In a large mixing bowl, beat the softened butter and powdered sugar together until the mixture is fluffy.
- Add the vanilla and almond extracts, mixing well to combine the flavors.
- Gradually stir in the flour and salt until the mixture is well incorporated.
- Add the chopped almonds and mix until just combined.
3. Form the Cookies
- Take a tablespoon of dough and flatten it in your hand.
- Place a teaspoon of raspberry jam in the center of the flattened dough.
- Fold the dough around the jam and roll it into a ball, ensuring the jam is fully enclosed within the dough.
- Place each ball on the prepared baking sheet, leaving space between them to allow for spreading during baking.
4. Bake
- Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
5. Dust with Sugar
- While the cookies are still warm, dust them generously with powdered sugar using a fine sieve or sifter.
- Allow them to cool completely before serving to let the flavors meld together.
