Instructions

1. Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper to prevent sticking.

2. Make the Dough

  • In a large mixing bowl, beat the softened butter and powdered sugar together until the mixture is fluffy.
  • Add the vanilla and almond extracts, mixing well to combine the flavors.
  • Gradually stir in the flour and salt until the mixture is well incorporated.
  • Add the chopped almonds and mix until just combined.

3. Form the Cookies

  • Take a tablespoon of dough and flatten it in your hand.
  • Place a teaspoon of raspberry jam in the center of the flattened dough.
  • Fold the dough around the jam and roll it into a ball, ensuring the jam is fully enclosed within the dough.
  • Place each ball on the prepared baking sheet, leaving space between them to allow for spreading during baking.

4. Bake

  • Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

5. Dust with Sugar

  • While the cookies are still warm, dust them generously with powdered sugar using a fine sieve or sifter.
