- 3/4 cup smooth extra virgin olive oil
- 1 packet Zesty Italian dressing mix
- 1/3 cup white vinegar
- 1/4 cup water
- 1 tbsp grated Romano cheese or extra Parmesan
- 3 tsp sugar
- 1 1/2 tsp mayonnaise
- 1 tsp Dijon mustard
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder

Step 1: Make the Dressing
- Combine Ingredients: In a jar with a lid, add the extra virgin olive oil, Zesty Italian dressing mix, white vinegar, water, grated Romano cheese, sugar, mayonnaise, Dijon mustard, Italian seasoning, salt, pepper, and garlic powder.
- Shake Well: Secure the lid and shake the jar vigorously until all ingredients are well mixed.
- Chill: Place the dressing in the fridge to chill while you prepare the salad.
Step 2: Prep the Salad
- Dry the Tomatoes: Use a paper towel to pat dry the sliced roma tomatoes to prevent excess moisture in the salad.
- Combine Ingredients: In a large bowl, mix the chopped lettuce, shredded red cabbage, julienne carrots, sliced red onion, black olives, sliced roma tomatoes, pepperoncinis, and croutons.
Step 3: Combine and Serve
- Drizzle Dressing: Pour the desired amount of dressing over the salad. Remember, you won’t need to use all of it immediately.
