Instructions
Part 1: Making the Creamy Gorgonzola Cauliflower Sauce

- Sauté Aromatics: Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Add the smashed garlic cloves and cook for 1-2 minutes until fragrant, being careful not to burn them.

- Simmer Cauliflower: Add the cauliflower florets, vegetable broth, and milk to the pot. Season with 1 teaspoon of salt and ½ teaspoon of black pepper.

- Cook Until Tender: Bring the mixture to a simmer, then reduce the heat to medium-low, cover the pot, and cook for 15-20 minutes, or until the cauliflower is very tender and easily pierced with a fork.

- Blend the Sauce: Carefully transfer the cauliflower mixture (including the liquid and garlic) to a high-speed blender. Work in batches if necessary to avoid overfilling the blender. Add the crumbled Gorgonzola cheese, ¼ cup grated Parmesan cheese, and freshly grated nutmeg.

- Blend Until Smooth: Blend on high speed until the sauce is completely smooth and creamy. This might take 1-2 minutes depending on your blender. Be cautious when blending hot liquids; start on low speed and gradually increase, ensuring the lid is securely vented.

- Taste and Adjust: Taste the sauce and adjust seasoning if needed (more salt, pepper, or even a touch more Gorgonzola if you like it bolder). The consistency should be thick but pourable, like a traditional béchamel. If it’s too thick, blend in a tablespoon or two of warm broth or milk at a time. Set aside.
Part 2: Preparing the Mushroom and Kale Filling

- Sauté Mushrooms: Heat 1 tablespoon of olive oil in a large skillet or sauté pan over medium-high heat. Add half of the chopped mushrooms in a single layer (don’t overcrowd the pan, cook in batches if needed). Cook without stirring for 3-4 minutes until they start to brown on one side. Then, stir and continue cooking until they are nicely browned and their moisture has mostly evaporated (about 5-7 minutes total per batch). Transfer the cooked mushrooms to a large bowl. Repeat with the remaining olive oil and mushrooms. Cooking them well develops deep, savory flavor.

Add the chopped shallots to the same skillet (add a touch more oil if the pan seems dry) and sauté for 3-4 minutes until softened and translucent. - Wilt the Kale: Add the chopped kale to the skillet, perhaps in batches if it’s voluminous. Stir frequently until the kale wilts down significantly and becomes tender, about 5-8 minutes. You might need to add a tablespoon or two of water or broth if the pan gets too dry, covering briefly can help steam the kale.

- Combine Filling Ingredients: Add the cooked kale mixture to the bowl with the sautéed mushrooms. Let it cool slightly for a few minutes.

- Mix the Filling: Add the ricotta cheese, ½ cup grated Parmesan cheese, and the lightly beaten egg to the mushroom and kale mixture. Stir everything together until well combined. Season with ¾ teaspoon salt and ½ teaspoon black pepper, or to taste. Mix thoroughly.
Part 3: Cooking the Lasagna Noodles

- Boil Water: Bring a large pot of generously salted water to a rolling boil. Adding salt to the water seasons the pasta itself.

- Cook Noodles: Add the lasagna noodles one by one to the boiling water. Cook according to package directions until al dente (usually around 8-10 minutes). They should be pliable but still have a slight bite. You want them soft enough to roll but not so soft they disintegrate. Cooking them slightly less than package directions often works well.

- Drain and Separate: Carefully drain the cooked noodles using a colander. Rinse them briefly under cool water to stop the cooking process and wash off excess starch. Lay the noodles flat in a single layer on clean kitchen towels or parchment paper, ensuring they don’t touch or overlap much, to prevent sticking while you assemble.
Part 4: Assembling the Lasagna Roll-Ups

- Preheat Oven & Prepare Dish: Preheat your oven to 375°F (190°C). Spread about ½ to ¾ cup of the Creamy Gorgonzola Cauliflower Sauce evenly over the bottom of a 9×13 inch baking dish. This prevents the rolls from sticking and creates a saucy base.

- Fill the Noodles: Lay one cooked lasagna noodle flat on a clean work surface. Spread about ¼ cup of the mushroom and kale ricotta filling evenly over the surface of the noodle, leaving a small border (about ½ inch) at one end.

- Roll Them Up: Starting from the end with the filling spread close to the edge, carefully roll the noodle up snugly, like a jelly roll.

- Place in Dish: Place the rolled-up noodle seam-side down in the prepared baking dish on top of the sauce layer.

- Repeat: Repeat the filling and rolling process with the remaining noodles and filling, arranging the roll-ups snugly side-by-side in the baking dish. Depending on your noodle size and filling amount, you should get 12-15 rolls.
Part 5: Baking the Roll-Ups

- Top with Sauce and Cheese: Pour the remaining Creamy Gorgonzola Cauliflower Sauce evenly over the top of the lasagna roll-ups in the baking dish. Ensure they are well-covered.

- Add Cheese Topping: Sprinkle the shredded mozzarella cheese evenly over the sauce, followed by the remaining ¼ cup of grated Parmesan cheese.
