Midnight Pasta recipe

  • Author: Sophia

Ingredients

Scale

  • 1 lb dried spaghetti
  • 1/3 cup olive oil
  • 8 garlic cloves, thinly sliced
  • 1/2 tsp red pepper flakes
  • 1/2 cup fresh parsley, chopped
  • 1 cup grated Parmesan cheese plus more for serving
  • Kosher salt

Instructions

  1. Boil Pasta:
Boil a large pot of water. Add 2 teaspoons of salt to the water and cook the spaghetti according to the package instructions. Make sure to reserve 1 1/2 cups of the pasta water before draining.
  2. Prepare Garlic and Oil:
In a large skillet, heat the olive oil over medium heat. Add the thinly sliced garlic cloves and stir for about 2 minutes, or until they are lightly golden.
  3. Add Spice:
Add the red pepper flakes to the skillet and cook for another 30 seconds, allowing the flavors to meld together.
  4. Incorporate Pasta Water:
Carefully mix in the reserved pasta water and bring to a boil. Lower the heat and let it simmer for about 5 minutes until the liquid has reduced by a third.
  5. Combine and Toss:
Toss in the drained spaghetti, then remove from heat. Mix in the Parmesan cheese and chopped parsley, ensuring the pasta is well-coated.
  6. Rest and Serve:
Let the pasta rest for 5 minutes to allow the flavors to meld. Serve warm, topped with extra Parmesan cheese for added richness.
