Part 1: Making the Creamy Chia Pudding

Combine Ingredients: In a medium-sized bowl or a large jar, add the chia seeds, coconut milk, maple syrup, vanilla extract, and the pinch of salt.

Whisk Vigorously: This is the most important step to prevent clumps! Whisk the mixture together vigorously for about a minute until you see that the chia seeds are evenly distributed and there are no dry clumps.

First Rest: Let the mixture sit on the counter for 5-10 minutes. During this time, the seeds will start to gel.

Second Whisk: After the initial rest, give the mixture another thorough whisk. This second stir is your secret weapon against clumping and ensures a perfectly smooth, homogenous pudding.

Chill and Set: Cover the bowl or jar with a lid or plastic wrap. Place it in the refrigerator to set for at least 4 hours, but for the best, thickest consistency, let it chill overnight.
Part 2: Preparing the Vibrant Mango Puree

Blend the Mango: Once the chia pudding has fully set, it’s time to make the mango layer. Add the ripe mango chunks and the optional lime juice to a high-speed blender or a food processor.

Puree Until Smooth: Blend on high until the mixture is completely smooth and silky. If your mango is less juicy and the blender is struggling, add a tablespoon of water or coconut milk to help it along, but try to use as little liquid as possible to keep the puree thick.

Taste and Adjust: Taste the puree. If your mango isn’t quite sweet enough, you can add a small amount of maple syrup, but a good ripe mango usually doesn’t need it.
Part 3: Assembling Your Masterpiece

Get Your Jars: Choose two glasses, jars, or bowls for serving.

Layer it Up: You can assemble your pudding in a few beautiful ways:

Classic Layers: Spoon half of the set chia pudding into the bottom of each jar. Gently top with half of the mango puree. Repeat the layers if you want a parfait effect.

Hidden Mango Core: Fill the jars 2/3 full with chia pudding. Use a spoon to create a small well in the center and pour the mango puree inside.

Swirled: Add alternating spoonfuls of chia pudding and mango puree and use a knife or skewer to gently swirl them together for a marbled look.
