Low Carb Crack Chicken Casserole recipe

  • Author: Sophia

Ingredients

  • Chicken: 4 cups cooked and shredded chicken (about 2 lbs or 900g of boneless, skinless chicken breasts or thighs). A store-bought rotisserie chicken is a perfect shortcut.

  • Bacon: 1 lb (450g) bacon, cooked until crispy and crumbled or chopped. Reserve 1/4 cup for topping.

  • Cream Cheese: 8 oz (226g) full-fat block cream cheese, softened to room temperature.

  • Cheddar Cheese: 2 cups shredded sharp cheddar cheese, divided. Reserve 1 cup for topping. (Shredding your own from a block is highly recommended for better melting).

  • Ranch Seasoning: 1 (1-ounce) packet of dry ranch seasoning mix.

  • Heavy Cream: 1/4 cup heavy whipping cream.

  • Green Onions: 1/4 cup thinly sliced green onions (scallions), for mixing and garnish.

  • Garlic Powder: 1 teaspoon garlic powder.

  • Black Pepper: 1/2 teaspoon freshly ground black pepper.

  • Salt: 1/4 teaspoon salt (adjust to taste, as the bacon and ranch mix are already salty).

Instructions

Step 1: Prepare Your Components

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch casserole dish or a similar 2.5 to 3-quart baking dish.

  • Cook Chicken (if needed): If you are not using a pre-cooked rotisserie chicken, cook your chicken breasts or thighs. You can boil, bake, or pan-sear them until the internal temperature reaches 165°F (74°C). Let the chicken cool slightly, then use two forks to shred it into bite-sized pieces.

  • Cook Bacon: While the chicken cooks, cook the bacon until crispy. You can do this in a skillet on the stove, on a baking sheet in the oven, or in an air fryer. Once cooked, place the bacon on a paper towel-lined plate to drain excess grease. Once it has cooled, crumble or chop it into small pieces. Remember to set aside about a quarter of the bacon for the topping.

Step 2: Create the Creamy Base

  • In a large mixing bowl, combine the softened block of cream cheese, 1 cup of the shredded cheddar cheese, the heavy cream, the entire packet of dry ranch seasoning, garlic powder, salt, and pepper.

  • Use a hand mixer or a sturdy spatula to mix everything together until it is well-combined, smooth, and creamy. Getting the cream cheese fully incorporated without lumps is key, which is why having it at room temperature is so important.

Step 3: Combine and Assemble the Casserole

  • Add the 4 cups of shredded chicken, the crumbled bacon (saving some for the top), and most of the sliced green onions (saving some for garnish) to the bowl with the cream cheese mixture.

  • Stir everything together until the chicken and bacon are completely coated in the creamy sauce.

  • Spread the mixture evenly into your prepared casserole dish.

Step 4: Bake to Golden Perfection

  • Top the casserole evenly with the remaining 1 cup of shredded cheddar cheese and the reserved crumbled bacon.

  • Place the casserole dish in the preheated oven and bake for 20-25 minutes.

  • The casserole is done when the cheese on top is fully melted and golden brown, and the edges are hot and bubbly.

  • Remove the casserole from the oven and let it rest for 5-10 minutes. This allows it to set up slightly, making it easier to serve.

Step 5: Garnish and Serve

  • Sprinkle the top of the hot casserole with the remaining sliced green onions for a pop of fresh flavor and color.

  • Serve warm and enjoy the decadent, cheesy goodness.
