Instructions

Step 1: Prepare the Oven

  1. Preheat your oven to 350°F (175°C).

Step 2: Make the Crust

  1. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted coconut oil.
  2. Press this mixture firmly into a pie pan to form the crust, ensuring even thickness across the bottom and up the sides.
  3. Bake the crust in the preheated oven for 8-10 minutes until it’s golden and firm.
  4. Remove from the oven and let it cool completely.

Step 3: Prepare the Filling

  1. In a separate bowl, whisk together the egg yolks, sweetened condensed coconut milk, lime juice, and lime zest until the mixture is smooth and well-combined.

  1. Pour the lime filling into the cooled crust, spreading it evenly.
