Step 1: Prepare the Oven
- Preheat your oven to 350°F (175°C).
Step 2: Make the Crust
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted coconut oil.
- Press this mixture firmly into a pie pan to form the crust, ensuring even thickness across the bottom and up the sides.
- Bake the crust in the preheated oven for 8-10 minutes until it’s golden and firm.
- Remove from the oven and let it cool completely.
Step 3: Prepare the Filling
- In a separate bowl, whisk together the egg yolks, sweetened condensed coconut milk, lime juice, and lime zest until the mixture is smooth and well-combined.
Step 4: Assemble the Pie
- Pour the lime filling into the cooled crust, spreading it evenly.
Step 5: Bake the Pie
- Return the pie to the oven and bake for 15 minutes. The filling should be set but still slightly jiggly in the center.
Step 6: Cool and Refrigerate
- Allow the pie to cool at room temperature, then refrigerate for at least 2 hours to fully set the filling.
