Hobo Casserole Recipe

  • 1 lb ground turkey (or chicken)
  • 1 can (15 oz) mixed vegetables (drained)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 cups diced potatoes (fresh or frozen)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground turkey over medium heat. Season with salt and pepper to taste.
  3. Stir in mixed vegetables, cream of mushroom soup, and diced potatoes. Mix well until all ingredients are thoroughly combined.
  4. Transfer the mixture into a casserole dish and top with shredded cheese.
  5. Bake for 30-35 minutes or until the potatoes are tender and the cheese is bubbly and golden.
