- Melt the Chocolate:

If using a double boiler, place a heatproof bowl over a pot of simmering water and stir the chocolate until melted. Once melted, let the chocolate cool slightly. - Whip the Cream:
In a large mixing bowl, whip the heavy cream until soft peaks form. This means the cream should hold its shape but still have a slight droop when you lift the beaters. - Combine Ingredients:
Gently fold the cooled chocolate into the whipped cream. Add the honey or maple syrup, vanilla extract, and a pinch of salt. Fold the mixture until all the ingredients are well combined, taking care not to deflate the whipped cream. - Chill and Serve:
Spoon the chocolate mousse into serving cups or ramekins. Cover and chill in the refrigerator for at least 2 hours to allow the mousse to set. This chilling time is crucial for achieving the perfect mousse texture.
