Easy Sloppy Joe Mac and Cheese Bombs recipe

Ingredients

        • Cheddar Cheese: 1 ½ cups (about 6 ounces or 170g) shredded (sharp cheddar is great)

    • For the “Bombs”:
        • Refrigerated Biscuit Dough: 1 can (16.3 ounces or 462g) large refrigerated biscuits (like Pillsbury Grands! Southern Homestyle – 8 biscuits)

        • Egg (for egg wash): 1 large, beaten with 1 tablespoon of water (optional, for a golden-brown sheen)

        • Sesame Seeds or Dried Parsley: For garnish (optional)


Instructions

    1. Prepare the Sloppy Joe Filling:
        • In a large skillet, cook the ground beef over medium-high heat, breaking it apart with a spoon, until browned. Drain off any excess grease.

        • Add the chopped onion and green bell pepper (if using) to the skillet with the beef. Cook for 5-7 minutes, or until the vegetables are softened.

        • Stir in the ketchup, Worcestershire sauce, brown sugar, yellow mustard, and garlic powder. Season with salt and pepper to taste.

        • Bring the mixture to a simmer, then reduce the heat to low and cook for 10-15 minutes, stirring occasionally, to allow the flavors to meld. The mixture should be thick, not too runny.

        • Remove from heat and let the sloppy joe filling cool slightly. This is important – hot filling can make the biscuit dough soggy and difficult to work with.

    1. Prepare the Mac and Cheese:
        • Cook the elbow macaroni according to package directions until al dente. Drain well and set aside.

        • In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, whisking constantly, to form a roux.

        • Gradually whisk in the milk until smooth. Continue to cook, whisking frequently, until the sauce thickens and comes to a gentle simmer (about 3-5 minutes).

        • Remove the saucepan from the heat. Stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.

        • Add the cooked macaroni to the cheese sauce and stir to combine thoroughly. Let the mac and cheese cool slightly. It should be thick and cheesy.

    1. Combine Fillings (Optional but Recommended):
        • For easier assembly and a more integrated flavor, you can mix some of the sloppy joe filling directly into the mac and cheese. A good ratio is about 1 cup of the sloppy joe mixture into the prepared mac and cheese, or adjust to your preference. Alternatively, you can layer them. For this recipe, we’ll assume you’ve mixed them. The combined filling should be thick enough to scoop. If it’s too loose, you can chill it for 15-20 minutes.

    1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it.

    1. Assemble the Bombs:
        • Separate the biscuit dough into individual biscuits. Gently flatten each biscuit with your fingers or a rolling pin into a 4-5 inch circle. Be careful not to tear the dough.

        • Place a generous scoop (about 2-3 tablespoons) of the sloppy joe mac and cheese filling into the center of each flattened biscuit. Don’t overfill, or they will be difficult to seal and may burst during baking.

    1. Egg Wash and Bake:
        • If using, brush the tops of the bombs with the beaten egg wash. This will give them a beautiful golden-brown color and a slight shine.

        • Sprinkle with sesame seeds or dried parsley, if desired.
