Add minced garlic and cook for another minute, until fragrant. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off any excess grease.

- Add Sauce Ingredients: Stir in crushed tomatoes, tomato paste, red wine (if using), beef broth, cinnamon, oregano, bay leaf, salt, and black pepper. Bring the mixture to a simmer, then reduce heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally. Longer simmering time allows the flavors to meld and deepen. Remove bay leaf before assembling. Taste and adjust seasoning as needed. The sauce should be thick and flavorful. If it’s too thick, add a little more beef broth; if it’s too thin, simmer uncovered to reduce slightly.

- Bake the Pastitsio: Bake in the preheated oven for 30-40 minutes, or until the béchamel topping is golden brown and bubbly, and the Pastitsio is heated through. The top should be nicely browned and slightly crisp in places.
