Part 1: Preparing the Dates

Create an Opening: Take a Medjool date and, using a small, sharp paring knife, make a lengthwise slit from top to bottom on one side. Be careful not to cut all the way through to the other side. You are essentially creating a pocket.

Remove the Pit: Gently pry the date open along the slit you just made. Use your fingers or the tip of the knife to remove the pit from the center and discard it.

Arrange for Filling: Lay the pitted, open dates on a baking sheet or large plate lined with parchment paper. The parchment paper is essential to prevent sticking later on. Repeat this process for all 12 dates.
Part 2: Creating the Peanut Butter Crunch Filling

Combine Ingredients: In a small bowl, combine the ½ cup of creamy peanut butter and the ¼ cup of chopped roasted peanuts.

Mix Thoroughly: Stir the mixture until the chopped peanuts are evenly distributed throughout the peanut butter.
Part 3: Stuffing the Dates

Microwave in 30-second intervals, stirring well after each interval, until the chocolate is almost completely melted. Remove and continue to stir until the residual heat melts the remaining bits and the chocolate is perfectly smooth.

Double Boiler Method: If you don’t have a microwave, fill a small saucepan with about an inch of water and bring it to a gentle simmer. Place a heatproof bowl (that fits snugly over the saucepan without touching the water) on top. Add the chocolate and coconut oil to the bowl and stir occasionally until it is completely melted and smooth.

Dip the Dates: Remove the firm, chilled dates from the freezer. Working one at a time, drop a stuffed date into the bowl of melted chocolate. Use two forks to roll the date around until it is completely coated.

Remove and Drip: Lift the chocolate-coated date out of the bowl using one of the forks. Tap the fork gently against the side of the bowl to allow any excess chocolate to drip off.

Return to Parchment: Carefully place the chocolate-coated date back onto the parchment-lined baking sheet. Repeat with the remaining dates.

The Final Garnish: While the chocolate is still wet, immediately sprinkle a small pinch of flaky sea salt over the top of each Date Snickers.
