Instructions

Stage 1: Whipping the Vibrant Beet Feta

This is where the magic happens. A food processor is the best tool for this job.

  1. Combine Ingredients: In the bowl of a food processor, add the crumbled block of feta, the roughly chopped cooked beet, 2 tablespoons of extra virgin olive oil, 1 tablespoon of fresh lemon juice, and the minced garlic clove (if using).
  2. Blend Until Smooth: Secure the lid and blend on high speed. At first, the mixture will look chunky. Keep blending, stopping to scrape down the sides of the bowl with a spatula every 30 seconds or so.
  3. Achieve Creaminess: Continue blending for 2-3 minutes, or until the mixture is completely smooth, creamy, and a brilliant fuchsia color. The time will vary depending on the power of your food processor. Be patient; it will get there!
  4. Taste and Season: Transfer the whipped feta to a bowl. Give it a taste. It should be salty from the feta, but you can add a few cracks of fresh black pepper to enhance the flavor. You likely will not need any extra salt.

Stage 2: Preparing the Cucumber Base

  1. Wash and Dry: Thoroughly wash and dry your English cucumber. There’s no need to peel it, as the dark green skin adds beautiful color and texture.
