Cucumber Crab Bites recipe

Ingredients

  • 2 large English cucumbers

  • 8 ounces block cream cheese, softened to room temperature

  • ¼ cup full-fat mayonnaise

  • 2 tablespoons full-fat sour cream or plain Greek yogurt

  • 8 ounces lump crab meat, drained and picked over for shells

  • 2 tablespoons finely chopped fresh dill

  • 2 tablespoons finely chopped fresh chives

  • 1 tablespoon fresh lemon juice

  • ¼ teaspoon kosher salt (or to taste)

  • ⅛ teaspoon black pepper

  • Paprika or extra fresh dill for garnish


Instructions

Step 1: Prepare the Cucumber Cups

  1. Wash and dry the English cucumbers thoroughly.

  2. Trim off both ends of each cucumber.

  3. Cut the cucumbers crosswise into thick slices, about ¾-inch to 1-inch thick. You should get about 12-15 slices per cucumber.

  4. Using a small melon baller or a ½-teaspoon measuring spoon, carefully scoop out the center of each cucumber slice, leaving a solid base at the bottom and a sturdy wall around the sides. Be careful not to scoop all the way through.

  5. Arrange the hollowed-out cucumber cups on a platter or baking sheet lined with paper towels, hollow side down. This allows any excess moisture to drain out while you prepare the filling.

Step 2: Make the Creamy Crab Filling

  1. In a medium bowl, combine the softened cream cheese, mayonnaise, and sour cream. Use a spatula or hand mixer to beat until the mixture is completely smooth and creamy.

  2. Add the chopped fresh dill, chopped chives, fresh lemon juice, salt, and black pepper. Stir until everything is evenly combined.

  3. Add the well-drained lump crab meat to the bowl.

  4. Using a rubber spatula, gently fold the crab meat into the cream cheese mixture. Be gentle to keep the nice chunks of crab intact. Do not overmix.

  5. Taste the filling and adjust seasoning if necessary.

Step 3: Fill and Garnish

  1. Turn the cucumber cups hollow side up and pat the insides gently with a paper towel if they seem wet.

  2. Using a small spoon or a piping bag fitted with a large star tip (for a fancier look), carefully fill each cucumber cup with the crab mixture. You can mound it slightly on top.

  3. Arrange the filled bites on your serving platter.

  4. Garnish each bite with a light sprinkle of paprika for color or a tiny fresh sprig of dill.

  5. Serve immediately, or chill for up to 1-2 hours before serving.
