  • 1/4 cup butter
  • 1/4 cup flour
  • 2 1/2 cups warm water mixed with 3/4 cup milk powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded gouda cheese

Instructions

  1. Cook the Macaroni:
    Begin by boiling a pot of salted water. Add the macaroni and cook until al dente, following the package instructions. Drain the macaroni and set it aside.
  2. Prepare the Roux:
    In a large pan, melt the butter over medium heat. Once melted, add the flour, stirring continuously. Cook for about 2 minutes until the mixture turns a light brown color. This is your roux, which will thicken the cheese sauce.
  3. Create the Cheese Sauce:
    Gradually add the warm milk mixture to the roux, whisking to combine. Add the salt, black pepper, and smoked paprika. Continue to whisk the mixture until it slightly thickens, which should take about 5 minutes.
  4. Incorporate the Cheese:
    Remove the pan from heat. Add in the shredded cheddar and Gouda cheeses. Stir until the cheeses are fully melted and the sauce is smooth.
  5. Combine with Macaroni:
    Add the cooked macaroni to the cheese sauce, stirring until each piece is well coated.
  6. Season and Serve:
    Taste the mac and cheese, and adjust the seasoning with additional salt and pepper if needed. For a finishing touch, sprinkle a little smoked paprika on top before serving.
