Chocolate Peanut Butter Stacks Recipe

  • 48 Ritz crackers or similar buttery round crackers
  • ½ cup creamy peanut butter
  • ½ cup marshmallow fluff
  • 1 pound chocolate chips or coarsely chopped chocolate for melting
  • Holiday sprinkles (optional)

Instructions

1. Prepare Baking Sheet

Start by lining a baking sheet with parchment or wax paper. This will prevent the stacks from sticking and make for easy cleanup.

2. Make Sandwiches

  • Place 24 crackers on the prepared baking sheet.
  • In a bowl, mix the peanut butter and marshmallow fluff until well combined.
  • Spread a layer of this mixture on each cracker.
  • Top with the remaining 24 crackers to form sandwiches.

3. Melt Chocolate

  • In a microwave-safe bowl, melt the chocolate in 15 to 30-second intervals.
  • Stir between each interval until the chocolate is smooth and fully melted.

4. Dip Stacks

  • Use forks to carefully dip each sandwich in the melted chocolate.
  • Let the excess chocolate drip off before placing them back on the baking sheet.
  • Add sprinkles if desired for a festive touch.

5. Chill

  • Refrigerate the chocolate-covered stacks until the chocolate hardens. This will take about 1 hour.
