Instructions

1. Prep Egg Whites

  • Let egg whites sit at room temperature for 30 minutes. This step is crucial for achieving the right consistency when beating.

2. Preheat Oven

  • Set oven to 225°F (110°C). A low baking temperature ensures the meringues dry out properly without browning.

3. Mix Dry Ingredients

  • In a small bowl, whisk together powdered sugar and almond flour. This ensures the almond flour is evenly distributed and free of lumps.

4. Beat Egg Whites

  • In a large bowl, beat egg whites on medium speed until foamy. Gradually add granulated sugar, one tablespoon at a time, until the mixture is glossy and stiff peaks form.
  • Gently fold in the powdered sugar mixture. Be careful not to deflate the egg whites.

5. Shape Cookies

  • Transfer meringue to a piping bag. Pipe 1-inch cookies on a parchment-lined baking sheet, spaced 1 inch apart.
  • Smooth tops with a wet finger. This helps achieve an even surface on the cookies.

6. Bake Cookies

  • Bake for 40-45 minutes until firm. Turn off the oven and leave cookies inside for 1 hour.
  • Cool completely. This allows the meringue to set properly.

7. Make Ganache

  • In a small saucepan, heat heavy cream and corn syrup until just boiling.
  • Pour over chopped chocolates and stir until smooth.
  • Reserve 1 cup for piping and chill until thick. The ganache should be thick enough to hold its shape when piped.

8. Assemble Cookies

  • Pipe thick ganache onto half the cookies, then sandwich with the remaining cookies.

9. Dip in Ganache

  • Dip each sandwich halfway in the remaining ganache, letting excess drip off.
  • Roll in colored sugar or crushed candy if desired. This step adds a delightful crunch and visual appeal.

10. Set and Store

  • Place on wax paper to set.
  • Store in an airtight container at room temperature.
