Ingredients
For the Lemon-Tahini Dressing:

½ cup Tahini (good quality, runny, not from the bottom of the jar)

⅓ cup Fresh Lemon Juice (from 2-3 lemons)

¼ cup Water (plus more to thin if needed)

2 tablespoons Pure Maple Syrup (or honey if not vegan)

2 cloves Garlic, minced or pressed

½ teaspoon Sea Salt

¼ teaspoon Black Pepper
For the Salad:

1 large bunch Lacinato (Dinosaur) Kale, tough stems removed

1 (15-ounce) can Chickpeas, rinsed and drained

1 large English Cucumber, chopped

½ medium Red Onion, thinly sliced

⅓ cup Roasted Salted Sunflower Seeds

Optional Garnish: Extra sunflower seeds, fresh parsley, or a sprinkle of red pepper flakes

Prepare the Dressing: In a medium bowl or a glass jar with a lid, combine all the dressing ingredients: tahini, fresh lemon juice, water, maple syrup, minced garlic, salt, and pepper. Whisk vigorously (or shake the jar) until the dressing is completely smooth and creamy. Tahini can sometimes seize up when liquid is first added; just keep whisking, and it will smooth out. If the dressing is too thick, add more water, one tablespoon at a time, until it reaches your desired consistency. It should be pourable but still thick enough to coat the kale leaves. Taste and adjust seasoning if necessary—it might need more salt, lemon, or maple syrup depending on your tahini and your preference.

Prepare the Kale: Wash and thoroughly dry the kale leaves. This is important to ensure the dressing adheres properly. Using your hands, tear the leaves away from the tough center stems. Discard the stems (or save them for stocks or smoothies). Chop the kale leaves into small, bite-sized ribbons or pieces. Place the chopped kale in a large mixing bowl.

Massage the Kale: Pour about half of the prepared dressing over the kale in the bowl. Now, roll up your sleeves and use your hands to massage the dressing into the kale. Squeeze, toss, and rub the leaves for a full 2-3 minutes. You will physically feel the kale soften and wilt under your fingers. The leaves will turn a darker shade of green and shrink in volume by about a third. This step is not optional! It breaks down the tough cellulose structure, making the kale more tender and less bitter.

Combine the Salad: To the bowl of massaged kale, add the rinsed and drained chickpeas, the chopped English cucumber, and the thinly sliced red onion.

Toss Everything Together: Pour the remaining dressing over the salad. Use tongs or a large spoon to toss everything together until every ingredient is evenly coated in the creamy dressing.

Add the Final Touch: Just before serving, stir in the roasted sunflower seeds. This preserves their crunch.

Serve or Store: You can serve the salad immediately, or for even better flavor, cover it and let it marinate in the refrigerator for at least 30 minutes. Garnish with extra sunflower seeds or other desired toppings before serving.
