Chicken Stuffed Tomato Bites recipe

Ingredients

    • Tomatoes: 2 pints (about 4 cups) of large cherry tomatoes or grape tomatoes

    • Chicken: 2 cups of cooked and finely shredded or diced chicken (rotisserie chicken works perfectly)

    • Mayonnaise: 1/2 cup of good-quality mayonnaise (or see tips for a Greek yogurt alternative)

    • Celery: 1 celery stalk, very finely diced

    • Red Onion: 2 tablespoons of finely minced red onion

    • Fresh Herbs: 2 tablespoons of finely chopped fresh chives or parsley, plus more for garnish

    • Dijon Mustard: 1 teaspoon of Dijon mustard

    • Lemon Juice: 1 teaspoon of fresh lemon juice

    • Salt: 1/4 teaspoon of fine sea salt, or to taste

    • Black Pepper: 1/4 teaspoon of freshly ground black pepper, or to taste


Instructions

 

Wash the tomatoes thoroughly under cool running water and pat them completely dry.

Using a small, sharp serrated knife, slice a very thin layer off the top of each tomato (the stem end). Then, slice a tiny, paper-thin piece off the bottom of each tomato. This second, tiny slice creates a stable, flat base so your finished appetizers won’t roll around on the platter.

Using a small 1/4 teaspoon measuring spoon, a small melon baller, or the tip of a grapefruit spoon, carefully scoop out the seeds and pulp from the inside of each tomato, leaving the outer wall intact. Be gentle to avoid piercing the tomato shell.

Place the hollowed-out tomatoes upside down on a plate lined with paper towels. Let them drain for about 10-15 minutes. This crucial step removes excess moisture and prevents a watery filling.

Step 2: Make the Chicken Salad Filling

In a medium mixing bowl, combine the finely shredded chicken, mayonnaise, finely diced celery, minced red onion, chopped fresh herbs, Dijon mustard, and fresh lemon juice.

Stir everything together with a spatula until it is well combined and has a creamy, consistent texture.

Season the chicken salad with salt and pepper. Give it a final stir, then taste it and adjust the seasoning if necessary. The filling should be well-seasoned and flavorful on its own.

Step 3: Fill the Tomato Cups

Now for the fun part. Ensure your hollowed-out tomatoes are dry on the inside. You can fill them in two ways:

  • The Spoon Method: Use a small spoon (an espresso spoon or a 1/4 teaspoon works well) to carefully fill each tomato cup with the chicken salad mixture. Mound the filling slightly on top for a generous look.
  • The Piping Method (For a Cleaner Look): For a slightly more refined presentation, transfer the chicken salad to a piping bag. You can use a large round tip or simply snip the end off the bag. This method is often faster and less messy, especially if you’re making a large batch. Pipe the filling neatly into each tomato cup.

Step 4: Garnish and Chill

Arrange the filled tomato bites on your serving platter. Sprinkle the tops with a little extra finely chopped fresh chives or parsley. This finishing touch adds a pop of color and a final burst of freshness.

For the best flavor, cover the platter loosely with plastic wrap and chill the stuffed tomatoes in the refrigerator for at least 30 minutes before serving. This allows the flavors in the chicken salad to meld together and ensures the bites are served cool and refreshing.
