- 4 flour tortillas
- 1 tablespoon olive oil

Instructions
1. Sauté Vegetables
Start by preparing the filling for your quesadillas:
- Heat Olive Oil: Place a pan over medium heat and add the olive oil.
- Cook Mushrooms: Add the sliced mushrooms to the pan and cook until they become soft, approximately 5 minutes.
- Add Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Season: Add salt and pepper to your taste preferences.
2. Assemble Quesadillas
With the filling ready, it’s time to assemble the quesadillas:
- Cheese Layer: Spread half of the shredded cheese onto one half of each tortilla.
- Add Vegetables: Top the cheese with the sautéed spinach and mushrooms.
- More Cheese: Sprinkle the remaining cheese over the vegetable layer.
- Fold: Fold the tortillas in half, encasing the filling.
3. Cook
Cook the assembled quesadillas to perfection:
- Heat Pan: Use the same pan you used for the vegetables.
- Cook Quesadillas: Place each quesadilla in the pan and cook for 3-4 minutes per side or until the tortillas are golden brown and the cheese has melted.
4. Serve
Once cooked, it’s time to enjoy your creation:
- Cut: Cut each quesadilla into wedges.
- Serve: Serve with salsa on the side if desired.
