Instructions

1. Sauté Vegetables

Start by preparing the filling for your quesadillas:

  1. Heat Olive Oil: Place a pan over medium heat and add the olive oil.
  2. Cook Mushrooms: Add the sliced mushrooms to the pan and cook until they become soft, approximately 5 minutes.
  3. Add Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes.
  4. Season: Add salt and pepper to your taste preferences.

2. Assemble Quesadillas

With the filling ready, it’s time to assemble the quesadillas:

  1. Cheese Layer: Spread half of the shredded cheese onto one half of each tortilla.
  2. Add Vegetables: Top the cheese with the sautéed spinach and mushrooms.
  3. More Cheese: Sprinkle the remaining cheese over the vegetable layer.

3. Cook
