Instructions

Step 1: Prepare the “Confetti” Base

Place half of the cauliflower florets, half of the chopped carrot, and half of the chopped red and yellow bell peppers into the bowl of a food processor.   • No Food Processor? If you don’t have a food processor, you can achieve a similar result with more elbow grease. Use the large holes of a box grater for the cauliflower and carrot, and finely dice the bell peppers with a sharp knife.
