Cashew Tofu Stir Fry recipe

  • 1 block firm tofu, cubed
  • 1 cup cashews
  • 2 cups mixed veggies, such as bell peppers, broccoli, and snap peas
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp ginger, minced
  • 2 green onions, chopped
  • Cooked rice or noodles (for serving)

Instructions

  1. Press the tofu to remove excess moisture. Once drained, cut it into cubes.
  2. Heat the sesame oil in a pan over medium heat. Add the minced garlic and ginger, sautéing them for about 1 minute until fragrant.
  3. Introduce the tofu to the pan, cooking until it achieves a golden-brown color. This should take approximately 5-7 minutes.
  4. Add the mixed veggies to the tofu, stirring them in and cooking for another 3-4 minutes until they are tender yet crisp.
  5. Stir in the soy sauce and cashews, allowing them to cook for an additional 2 minutes to absorb the flavors.
  6. Serve the stir fry hot over a bed of cooked rice or noodles, topped with freshly chopped green onions for an added burst of flavor.
