- 1 block firm tofu, cubed
- 1 cup cashews
- 2 cups mixed veggies, such as bell peppers, broccoli, and snap peas
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp ginger, minced
- 2 green onions, chopped
- Cooked rice or noodles (for serving)
Instructions
- Press the tofu to remove excess moisture. Once drained, cut it into cubes.
- Heat the sesame oil in a pan over medium heat. Add the minced garlic and ginger, sautéing them for about 1 minute until fragrant.
- Introduce the tofu to the pan, cooking until it achieves a golden-brown color. This should take approximately 5-7 minutes.
- Add the mixed veggies to the tofu, stirring them in and cooking for another 3-4 minutes until they are tender yet crisp.
- Stir in the soy sauce and cashews, allowing them to cook for an additional 2 minutes to absorb the flavors.
- Serve the stir fry hot over a bed of cooked rice or noodles, topped with freshly chopped green onions for an added burst of flavor.
