Instructions

Making the Blini:

  1. Activate the Yeast: In a large bowl, warm the milk to lukewarm (about 100-110°F or 38-43°C). Dissolve the sugar and active dry yeast in the warm milk. Let it sit for 5-10 minutes until foamy – this indicates the yeast is active.
  2. Combine Wet and Dry Ingredients: In a separate bowl, whisk together the flour and salt. Pour the foamy yeast mixture into the dry ingredients. Add the egg and melted butter.
  3. Mix the Batter: Whisk until just combined. Do not overmix – a few lumps are okay. The batter should be smooth and slightly thick, resembling pancake batter.
  4. First Rise: Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size. This allows the yeast to work its magic and create light, airy blini.
