Ingredients

  • For the Sandwich:

    • 1 (6-inch) section of a crusty baguette or ciabatta roll, or 2 thick slices of sourdough bread

    • 1 large, ripe heirloom or beefsteak tomato

    • 4 oz fresh mozzarella cheese, sliced into 1/4-inch thick rounds

    • 8-10 fresh basil leaves

    • 1 tablespoon high-quality extra-virgin olive oil

    • 1 tablespoon high-quality balsamic glaze (thicker and sweeter than vinegar)

    • 1/4 teaspoon kosher salt

    • Freshly cracked black pepper, to taste


Instructions

Step 1: Prepare the Bread
Slice your ciabatta roll or baguette horizontally. If using sliced bread, lay the two slices out. If you prefer a warm, toasted sandwich (which is highly recommended!), you can either toast the bread in a toaster or heat a skillet over medium heat and toast the cut sides of the bread until they are golden brown and fragrant.

Step 2: The Foundation of Flavor
Drizzle the cut side of both pieces of bread with the extra-virgin olive oil. This not only adds a rich, fruity flavor but also creates a slight barrier to prevent the bread from becoming soggy from the tomato juices.

Step 3: The Art of Layering
On the bottom slice of bread, create a single, slightly overlapping layer of the fresh mozzarella slices. The cheese layer acts as another crucial moisture barrier.

Step 4: The Tomato and Basil
Slice your tomato into 1/4-inch thick rounds. Place the tomato slices in a single layer on top of the mozzarella. Now, season the tomatoes directly with the kosher salt and a generous amount of freshly cracked black pepper. This step is crucial, as salting the tomatoes draws out their flavor and enhances their sweetness. Arrange the fresh basil leaves over the seasoned tomatoes.

Step 5: The Finishing Touch
Drizzle the balsamic glaze over the basil and tomatoes. Place the top slice of bread on the sandwich, olive oil-side down.

Step 6: Press and Serve
Gently press down on the sandwich with the palm of your hand to meld the layers together. If you want a pressed, panini-style sandwich, you can place it in a panini press or back in a warm skillet and press down with another heavy pan until the cheese is just beginning to melt. Otherwise, it is ready to be served immediately as is.
