California Blend Vegetables recipe

Ingredients

  • 1 bag (16 oz / 450g) Frozen California Blend Vegetables

  • 2 tablespoons Olive Oil

  • 1 teaspoon Garlic Powder

  • 1/2 teaspoon Onion Powder

  • 1/2 teaspoon Salt (or to taste)

  • 1/4 teaspoon Black Pepper

  • 1/4 cup Grated Parmesan Cheese

  • Optional: Squeeze of fresh lemon juice for serving


Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Spread the frozen vegetables directly onto the prepared baking sheet in a single, even layer.

  3. Drizzle with olive oil and toss until all the vegetables are lightly coated.

  4. In a small bowl, mix together the garlic powder, onion powder, salt, and black pepper.

  5. Sprinkle the seasoning mix evenly over the vegetables and toss again to distribute.

  6. Roast for 15 minutes.

  7. Remove the pan from the oven, sprinkle the grated Parmesan cheese over the top, and gently toss.

  8. Return the pan to the oven and roast for another 10-12 minutes, or until the vegetables are tender and the cheese is melted and golden brown.

  9. Serve immediately, with an optional squeeze of fresh lemon juice to brighten the flavors.
