Blackberry Prosciutto Crostini recipe

  • Author: Sophia

Ingredients

  • Baguette: 1 long, thin baguette
  • Extra Virgin Olive Oil: 2-3 tablespoons, for brushing
  • Whole Milk Ricotta Cheese: 1 cup (about 8 ounces)
  • Prosciutto: 4 ounces (about 12-16 thin slices)
  • Fresh Blackberries: 1 pint (6 ounces), washed and dried
  • Balsamic Glaze: 2-3 tablespoons, for drizzling
  • Honey: 2-3 tablespoons, for drizzling
  • Fresh Herbs for Garnish: Fresh thyme sprigs or small fresh basil leaves
  • Salt and Black Pepper: Freshly cracked, to taste

Instructions

Stage 1: Creating the Perfect Crostini Base

  1. Preheat and Prepare: Position an oven rack in the middle of your oven and preheat to 375°F (190°C). Slice your baguette into ½-inch thick diagonal slices.
  2. Toast the Bread: Arrange the baguette slices in a single layer on a large baking sheet. Lightly brush both sides of each slice with good quality extra virgin olive oil.
  3. Bake to Golden Perfection: Bake for 8-10 minutes, flipping the slices over halfway through. They should be a beautiful light golden brown and feel crisp to the touch. Keep a close eye on them, as they can burn quickly.
  4. Cool: Remove from the oven and let the crostini cool on the baking sheet. They will continue to crisp up as they cool.

Stage 2: Preparing the Creamy Ricotta Base

  1. Drain the Ricotta (Optional but Recommended): For the best texture, place the ricotta in a fine-mesh sieve lined with cheesecloth and let it drain over a bowl for at least 15-30 minutes to remove excess moisture.
  2. Season the Ricotta: Transfer the drained ricotta to a small bowl. Add a pinch of salt and a few cracks of fresh black pepper. Stir to combine. You can also add a teaspoon of fresh lemon zest for an extra layer of brightness.

Stage 3: The Art of Assembly

For the best texture, assemble the crostini no more than an hour before serving.

  1. Spread the Ricotta: Take a cooled crostini and spread a generous layer (about 1-2 teaspoons) of the seasoned ricotta cheese evenly over the top.
  2. Drape the Prosciutto: Take a thin slice of prosciutto and gently fold or ruffle it into a loose ribbon. Place it artfully on top of the ricotta.
  3. Add the Blackberry: Nestle one perfect, plump blackberry on top of the prosciutto.
  4. Drizzle and Garnish: This is the final touch. Lightly drizzle a small amount of both the balsamic glaze and the honey over the top of each crostini.
  5. Add the Herb: Finish each bite with a few tiny leaves from a sprig of fresh thyme or a single small basil leaf. The fresh herb adds a beautiful pop of green and an incredible aroma.
  6. Serve Immediately: Arrange your beautiful creations on a platter and serve right away to enjoy the perfect contrast of crunchy and creamy.
