  • 2 cloves garlic, minced

  • 2 cups vegetable broth or water
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the Aromatics
    Heat 1 tablespoon of olive oil in a pot over medium heat. Add the chopped onion and minced garlic, sautéing them until they become soft and fragrant, about 3 minutes.
  2. Add Bell Pepper and Spices
    Stir in the diced bell pepper, cumin, and paprika. Cook for another 3 minutes, allowing the spices to infuse and the bell pepper to start softening.
  3. Cook the Rice
    Add the rice to the pot along with the vegetable broth or water. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for 15-20 minutes, or until the rice is fully cooked and has absorbed the liquid.
  4. Incorporate Black Beans
    Stir in the drained and rinsed black beans. Season the mixture with salt and pepper to taste. Cook for an additional 2-3 minutes, ensuring the beans are heated through.
