Ingredients
Scale
- 1 cup rice (white or brown)
- 1 can black beans (15 oz), drained and rinsed
- 1 bell pepper (any color), diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 2 cups vegetable broth or water
- Olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Sauté the Aromatics
Heat 1 tablespoon of olive oil in a pot over medium heat. Add the chopped onion and minced garlic, sautéing them until they become soft and fragrant, about 3 minutes. - Add Bell Pepper and Spices
Stir in the diced bell pepper, cumin, and paprika. Cook for another 3 minutes, allowing the spices to infuse and the bell pepper to start softening. - Cook the Rice
Add the rice to the pot along with the vegetable broth or water. Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for 15-20 minutes, or until the rice is fully cooked and has absorbed the liquid. - Incorporate Black Beans
Stir in the drained and rinsed black beans. Season the mixture with salt and pepper to taste. Cook for an additional 2-3 minutes, ensuring the beans are heated through. - Serve and Garnish
Serve the dish hot, garnished with fresh cilantro if desired. Enjoy your flavorful creation!
