You’ll need a surprisingly large amount, about 8-10 oz (225-285g) of fresh spinach (baby spinach or mature spinach, roughly chopped if mature). It looks like a lot initially, but it cooks down significantly.

    • Aromatics: Essential for building flavour.
        • Garlic: 3-4 large cloves, minced or thinly sliced.

        • Ginger: 1 tablespoon fresh ginger, grated or finely minced.

    • Marinade Ingredients (for tenderizing and flavouring beef):
        • Low-Sodium Soy Sauce (or Tamari for gluten-free): 1.5 tablespoons.

        • Cornstarch (Cornflour): 1.5 teaspoons (helps create a protective coating and tenderizes).

        • Sesame Oil: 1 teaspoon (toasted sesame oil for best flavour).

        • Optional: Pinch of white pepper, 1 teaspoon Shaoxing wine (or dry sherry).

    • Stir-Fry Sauce Ingredients:
        • Low-Sodium Soy Sauce (or Tamari): 3 tablespoons.

        • Beef Broth or Water: ¼ cup (60ml).

        • Oyster Sauce (optional, adds deep umami): 1 tablespoon (use vegetarian oyster sauce if needed).

        • Sesame Oil: 1 teaspoon.

        • Sugar or Honey: 1-2 teaspoons (balances the saltiness).

        • Cornstarch (Cornflour): 1 teaspoon (for thickening the sauce).

    • Cooking Oil: A high smoke point oil is essential for stir-frying.
        • Options: Avocado oil, grapeseed oil, canola oil, peanut oil, or other vegetable oil. About 2-3 tablespoons total.

Instructions

    1. Prepare the Beef:
        • Slice: Pat the beef dry with paper towels. Place the beef on a cutting board. Identify the direction of the muscle fibers (the grain). Using a sharp knife, slice the beef thinly (about 1/8 to 1/4 inch thick) against the grain. Slicing against the grain shortens the muscle fibers, making the beef much more tender after cooking. Tip: Partially freezing the beef for 15-20 minutes makes it firmer and easier to slice thinly.

        • Marinate: Place the sliced beef in a medium bowl. Add the marinade ingredients: low-sodium soy sauce, cornstarch, sesame oil, (and optional white pepper/Shaoxing wine). Toss well to ensure every piece of beef is coated. Let it marinate at room temperature for at least 15 minutes, or up to 30 minutes (or cover and refrigerate for longer, but bring towards room temp before cooking). The cornstarch not only adds flavour but also creates a light coating (velveting) that protects the beef from the high heat and helps keep it tender.

    1. Prepare Other Ingredients (Mise en Place):
        • While the beef marinates, prepare the rest of your ingredients as stir-frying moves quickly.

        • Wash Spinach: Thoroughly wash the spinach, even if pre-washed, and spin dry or pat very dry with paper towels. Excess water will steam the stir fry rather than sear it. If using mature spinach, roughly chop the leaves.

        • Aromatics: Mince or grate the garlic and ginger. Keep them nearby, perhaps in a small bowl together.

        • Sauce: In a small bowl or liquid measuring cup, whisk together all the stir-fry sauce ingredients: low-sodium soy sauce, beef broth/water, oyster sauce (if using), sesame oil, sugar/honey, and the 1 teaspoon of cornstarch. Whisk until the cornstarch is fully dissolved. Set aside.

        • Garnishes: Toast sesame seeds (if not already toasted) in a dry pan over medium heat for a few minutes until fragrant. Slice green onions.

    1. Set Up Your Stir-Fry Station:
        • Have all your prepared ingredients (marinated beef, spinach, aromatics, sauce mixture, cooking oil) within easy reach of your stove. Stir-frying requires quick additions, so being organized is key. Ensure your wok or large skillet is ready.

    1. Cook the Beef:
        • Place your wok or a large, heavy-bottomed skillet over high heat. Let it get screaming hot – you should see a slight shimmer or wisps of smoke from the pan itself before adding oil.

        • Add 1-1.5 tablespoons of high smoke point cooking oil to the hot wok/skillet. Swirl to coat the bottom.

        • Carefully add about half of the marinated beef in a single layer. Do not overcrowd the pan, as this will lower the temperature and cause the beef to steam instead of sear, resulting in toughness.

        • Let the beef sear undisturbed for about 60-90 seconds until browned on the first side. Then, stir-fry, tossing quickly, for another 1-2 minutes until just cooked through and nicely browned. It should cook very quickly due to thin slicing.

        • Remove the cooked beef from the wok/skillet using a slotted spoon or tongs and transfer it to a clean plate. Set aside.

        • Repeat the process with the remaining beef, adding a little more oil if needed.

    1. Stir-Fry Aromatics and Spinach:
        • Return the wok/skillet to high heat. If the pan looks dry, add the remaining ½ – 1 tablespoon of oil.

        • Add the minced garlic and ginger to the hot oil. Stir-fry constantly for about 20-30 seconds until highly fragrant. Be careful not to burn the garlic.

        • Immediately add the fresh spinach to the wok. It will seem like a huge amount, but it wilts down rapidly. Use tongs or a spatula to toss the spinach constantly in the hot wok. Cook for 1-3 minutes, just until the spinach has wilted significantly but still retains some vibrant green colour.

    1. Combine and Sauce:
        • Return the cooked beef (and any accumulated juices from the plate) back into the wok/skillet with the wilted spinach. Toss briefly to combine.

        • Give the prepared stir-fry sauce mixture a quick re-whisk (as the cornstarch may have settled). Pour the sauce evenly over the beef and spinach.

        • Stir and toss everything constantly for about 30-60 seconds. The sauce will bubble and thicken quickly due to the cornstarch and the heat. Ensure everything is coated in the glossy sauce.

    1. Serve:
        • Remove the wok/skillet from the heat immediately once the sauce has thickened to avoid overcooking the beef.

        • Taste and adjust seasoning if necessary (though usually not needed if using recommended soy/oyster sauce amounts).

        • Transfer the Beef and Spinach Stir Fry to a serving platter or individual plates.

        • Garnish with toasted sesame seeds and sliced green onions, if desired.
