Avocado Grilled Cheese recipe

  • 1 avocado
  • Juice of 1 lime
  • Kosher salt & black pepper to taste
  • 1 Tbsp. butter
  • 2 slices of your favorite bread
  • 2 slices of pepper jack cheese or mozzarella for a milder taste

Instructions

  1. Prepare the Avocado Mixture: In a bowl, mash the avocado until smooth. Add the lime juice, a pinch of kosher salt, and a dash of black pepper. Mix well to combine all the flavors.
  2. Butter the Bread: Take your chosen slices of bread and butter one side of each slice. This will ensure a golden, crispy exterior when grilled.
  3. Assemble the Sandwich: On the unbuttered side of one slice of bread, spread the avocado mixture evenly. Layer two slices of cheese on top of the avocado. Place the other slice of bread on top, buttered side facing out.
  4. Grill the Sandwich: Heat a pan over medium heat. Once hot, place the sandwich in the pan. Cook for 3-4 minutes until the bread is golden brown. Carefully flip the sandwich and cook for another 2 minutes, or until the cheese is melted and both sides are golden.
  5. Serve: Remove the sandwich from the pan and let it cool slightly. Slice it in half and enjoy!
