  • 1 sheet store-bought puff pastry
  • 1/2 cup shredded Mozzarella (or your favorite cheese)
  • 1/4 cup shredded Parmesan cheese
  • 1 bunch thin asparagus
  • 1 tablespoon olive oil

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 400 degrees Fahrenheit.

  2. Thaw the Puff Pastry:

    • Allow one sheet of puff pastry to thaw overnight in the refrigerator or on the counter until it’s pliable.

  3. Prepare the Asparagus:

    • Trim the ends of the asparagus to remove the tough, woody stems.

  4. Roll Out the Pastry:

    • Once thawed, unfold and roll out the dough on a lightly floured surface until the folding lines disappear.

  5. Transfer to Baking Sheet:

    • Place the puff pastry dough and parchment paper directly onto a baking sheet.

  6. Assemble the Tart:

    • Brush the pastry with olive oil.
    • Sprinkle half of the Mozzarella and Parmesan cheese over the pastry.
    • Line up the asparagus over the cheese.
    • Sprinkle the remaining cheese over the top and drizzle with the remaining olive oil.

  7. Bake the Tart:

    • Place the tart in the oven and bake for 20 minutes, or until the pastry is puffed and golden, and the asparagus is cooked.

  8. Season and Serve:

    • After removing the tart from the oven, sprinkle it with salt, black pepper, and red pepper flakes if desired.
    • Garnish with pea shoots or microgreens before serving.
