Steaming or blanching ensures the broccoli is tender-crisp in the final dish, not mushy.
  2. Prepare the Sauce: In a large bowl, whisk together the condensed cream of chicken soup, mayonnaise, milk or chicken broth, Parmesan cheese, and dry sherry (if using). Whisk until smooth and well combined. The sherry adds a wonderful depth of flavor, but it’s optional.
