Summer grilling season always gets me excited, but sometimes the usual burgers and hot dogs feel a bit repetitive. I was searching for something vibrant, healthy, and a little unexpected to throw on the barbecue for a family get-together last July. That’s when I stumbled upon the idea of combining sweet peaches with rich salmon, kicked up a notch with a spicy kick. Honestly, I was a tiny bit hesitant – fruit with fish can be tricky, and adding jalapeno into the mix felt like a gamble. But the lure of those beautiful, juicy peaches at the farmer’s market was too strong to resist. I decided to go for it, threading chunks of salmon, wedges of perfectly ripe peach, and colourful bits of red onion onto skewers. While they marinated briefly, I whipped up a creamy sauce, blending more peaches with a touch of jalapeno, lime, and cool sour cream. The aroma coming off the grill as the skewers cooked was incredible – smoky, sweet, and savoury all at once. The moment of truth arrived when I served them, drizzled generously with that pale orange, speckled crema. The reaction was immediate and unanimous: Wow! The sweetness of the grilled peaches perfectly complemented the flaky, rich salmon, the red onion added a slight bite, and the creamy, subtly spicy sauce tied everything together beautifully. It was a flavour explosion – fresh, exciting, and utterly delicious. My kids, who sometimes turn their noses up at fish, devoured their skewers. My friends were asking for the recipe before the plates were even cleared. These Peach Salmon Skewers with Peach Jalapeno Crema instantly became my signature summer dish, proving that taking a little flavour risk can lead to the most rewarding (and delicious) results.
Ingredients You’ll Need for Peach Salmon Skewers & Crema
Gathering fresh, quality ingredients is key to making this vibrant dish truly sing. Here’s a breakdown of what you’ll need for both the skewers and the flavour-packed crema. Precise measurements ensure the balance of sweet, savoury, spicy, and creamy is just right.
For the Peach Salmon Skewers:
- Salmon Fillet: 1.5 lbs (about 680g), skin removed, cut into 1.5-inch cubes. Choose high-quality salmon like King, Sockeye, or Atlantic. Ensure it’s fresh (or properly thawed if frozen) and firm to the touch. Removing the pin bones is recommended. Uniform cubes ensure even cooking.
- Ripe but Firm Peaches: 2-3 medium peaches, pitted and cut into 1-inch wedges or chunks. They need to be ripe enough for sweetness but firm enough to hold their shape on the grill without turning mushy. Freestone peaches are easier to pit. Leave the skin on for better structure and colour.
- Red Onion: 1 large, cut into 1-inch chunks, layers separated. Adds a pungent sweetness and beautiful colour contrast. Yellow or white onion can be substituted, but red offers the best flavour profile here.
- Bell Pepper (Optional): 1 medium (any colour like red, orange, or yellow), cut into 1-inch squares. Adds extra sweetness, colour, and vegetable goodness.
- Olive Oil: 3 tablespoons (45ml), extra virgin recommended. For the marinade, helps prevent sticking and adds flavour.
- Lemon Juice: 1 tablespoon (15ml), freshly squeezed. Adds brightness to the marinade and helps tenderize the salmon slightly. Lime juice works too.
- Garlic: 2 cloves, minced or finely grated. Provides an aromatic base for the marinade.
- Fresh Dill or Parsley: 1 tablespoon, finely chopped (optional, but recommended). Adds a touch of freshness to the marinade. Dill pairs exceptionally well with salmon.
- Salt: ¾ teaspoon (or to taste). Essential for flavouring the salmon and vegetables.
- Black Pepper: ½ teaspoon (or to taste), freshly ground preferred. Adds a gentle warmth.
- Wooden or Metal Skewers: About 8-10 skewers. If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent them from burning on the grill.
For the Peach Jalapeno Crema:
- Ripe Peach: 1 large, very ripe peach, pitted and roughly chopped (skin can be on or off). A softer, sweeter peach works best here for blendability and flavour.
- Jalapeno Pepper: ½ to 1 small jalapeno, stem removed. Roughly chopped. Include seeds and membranes for more heat; remove them for milder spice. Start with half and add more if desired. Wash hands thoroughly after handling.
- Sour Cream or Plain Greek Yogurt: ½ cup (about 120g). Provides the creamy base. Full-fat versions offer richer flavour and texture, but low-fat can be used. For dairy-free, use a plain, unsweetened coconut or cashew yogurt alternative, or cashew cream.
- Lime Juice: 1 tablespoon (15ml), freshly squeezed. Adds essential tang and brightness to cut through the richness and balance the sweetness.
- Fresh Cilantro: 2 tablespoons, roughly chopped (leaves and tender stems). Adds a fresh, herbaceous counterpoint to the sweet and spicy flavours. If you dislike cilantro, parsley can be used, but the flavour profile will change.
- Salt: ¼ teaspoon (or to taste). Enhances all the flavours in the crema.
Having all components prepped (mise en place) before you start assembling and grilling makes the process much smoother and more enjoyable.
Step-by-Step Instructions: Grilling Up Perfection
Follow these steps carefully to create perfectly cooked, flavourful Peach Salmon Skewers accompanied by the irresistible Peach Jalapeno Crema. The process involves preparing the crema, marinating the salmon briefly, assembling the skewers, and grilling them to perfection.
- Prepare the Peach Jalapeno Crema: This can be done first to allow the flavours to meld while you prepare the skewers.
- In the jar of a blender or the bowl of a food processor, combine the chopped ripe peach, the desired amount of chopped jalapeno (start with less, you can always add more), sour cream or Greek yogurt, fresh lime juice, chopped cilantro, and ¼ teaspoon of salt.
- Blend on high speed until the mixture is smooth and creamy. Scrape down the sides as needed.
- Taste the crema. Adjust seasoning if necessary – add more salt for flavour, more lime juice for tang, or more jalapeno for heat. If it’s too thick, you can add a teaspoon of water or milk (or non-dairy milk) to reach your desired consistency.
- Transfer the crema to a small bowl, cover, and refrigerate while you prepare the skewers. Chilling helps the flavours meld and thickens the crema slightly.
- Prepare the Marinade: In a medium-sized bowl, whisk together the olive oil, lemon juice, minced garlic, chopped fresh dill or parsley (if using), ¾ teaspoon salt, and ½ teaspoon black pepper.
- Prepare the Salmon and Vegetables: Ensure your salmon is cut into uniform 1.5-inch cubes. Pat the salmon cubes dry with paper towels; this helps the marinade adhere better and promotes better searing on the grill. Prepare the peaches, red onion, and bell pepper (if using) by cutting them into roughly 1-inch pieces, suitable for threading onto skewers. Keep the salmon separate from the fruits and vegetables for now.
- Marinate the Salmon (Briefly!): Add the salmon cubes to the bowl with the marinade. Gently toss to ensure all pieces are evenly coated. Let the salmon marinate at room temperature for just 15-20 minutes. Do not over-marinate! The acid in the lemon juice can start to “cook” the fish (like ceviche) and affect its texture if left too long. This brief marination is primarily for flavour. While the salmon marinates, ensure your wooden skewers (if using) are soaking in water.
- Assemble the Skewers:
- Remove the salmon from the marinade, letting any excess drip off (reserve any leftover marinade in the bowl for now, do not reuse it on cooked food).
- Thread the ingredients onto the skewers, alternating between salmon cubes, peach wedges/chunks, red onion pieces, and bell pepper squares (if using). Aim for a visually appealing pattern and try to start and end with a vegetable or fruit piece rather than salmon, as they are sturdier.
- Pack the ingredients snugly but not too tightly, allowing heat to circulate for even cooking. Aim for about 3-4 pieces of salmon per skewer, depending on length.
- Lightly brush the threaded peaches and vegetables with any remaining marinade left in the bowl (the marinade that didn’t touch the raw salmon for extended periods, or use fresh olive oil). Discard any marinade that the salmon sat in.
- Preheat the Grill: Preheat your outdoor grill or indoor grill pan to medium-high heat (around 400-450°F or 200-230°C). Clean the grill grates well and then oil them generously using a high-smoke-point oil (like canola, vegetable, or avocado oil) applied with a folded paper towel held by long tongs. Oiling the grates is crucial to prevent the delicate salmon and sweet peaches from sticking.
- Grill the Skewers:
- Place the assembled skewers directly onto the hot, oiled grill grates. Ensure there’s a little space between skewers for even cooking.
- Grill for approximately 8-12 minutes total, turning the skewers carefully about halfway through (after 4-6 minutes).
- Cooking time will vary depending on the thickness of your salmon cubes and the heat of your grill. The salmon is done when it’s opaque throughout, flakes easily with a fork, and reaches an internal temperature of 135-145°F (57-63°C) depending on your preferred doneness (medium to well-done). The peaches should be tender with nice grill marks, and the vegetables should be slightly softened but still have some bite. Avoid overcooking, as salmon can dry out quickly. The peaches will caramelize slightly from the heat.
- Alternative Cooking Methods (If No Grill):
- Oven Broiler: Position an oven rack about 6 inches below the broiler element and preheat the broiler on high. Place skewers on a foil-lined baking sheet. Broil for 4-6 minutes per side, watching closely to prevent burning, until salmon is cooked through.
- Baking: Preheat oven to 400°F (200°C). Place skewers on a baking sheet (lined with parchment for easy cleanup). Bake for 10-15 minutes, turning once, until salmon is cooked. You won’t get the same char, but it’s still delicious.
- Rest and Serve: Once cooked, carefully remove the skewers from the grill or oven and transfer them to a clean platter. Let them rest for a couple of minutes. Serve the Peach Salmon Skewers warm, drizzled generously with the chilled Peach Jalapeno Crema. Garnish with extra fresh cilantro or dill, if desired.
Enjoy this delightful combination of sweet, savoury, spicy, and smoky flavours!

Top 5 Tips for Perfect Peach Salmon Skewers
Elevate your Peach Salmon Skewers from great to absolutely perfect with these five helpful tips:
- Peach Precision: Choose Wisely & Prep Smart: The peaches play a dual role. For the skewers, select peaches that are ripe and fragrant but still quite firm to the touch. Underripe peaches won’t be sweet, while overripe ones will disintegrate on the hot grill. Freestone varieties are easier to pit cleanly. Cut them into substantial wedges or chunks (around 1-inch) so they hold up. Leave the skin on for better structure and a rustic look. For the crema, however, a very ripe, even slightly soft peach is ideal, as it will blend more easily and contribute maximum sweetness and flavour.
- Salmon Savvy: Uniform Cubes & Brief Marinade: Consistency is key for even cooking. Cut your skinless salmon fillet into uniform 1.5-inch cubes. This ensures that all pieces cook through at roughly the same rate, preventing some from being dry while others are undercooked. Crucially, do not over-marinate the salmon. The acidity (lemon/lime juice) will start to break down the proteins and can result in a mushy texture if left too long. A brief 15-20 minute marinade while you prep other items or preheat the grill is sufficient to impart flavour without compromising the fish’s delicate texture.
- Master the Grill: Hot, Clean, Oiled & Don’t Overcrowd: A successful grilling experience relies on proper prep. Preheat your grill to medium-high heat – hot enough to sear and create grill marks quickly without drying out the salmon. Thoroughly clean the grates to remove old debris, then oil them generously right before placing the skewers down. This is essential to prevent the delicate salmon and sugar-rich peaches from sticking disastrously. When placing skewers on the grill, leave some space between them for hot air to circulate, ensuring even cooking. Don’t overcrowd the grill.
- Spice Control in the Crema: Start Low, Go Slow: The Peach Jalapeno Crema’s charm lies in the balance of sweet, creamy, and spicy. Jalapeno heat can vary significantly. Always start by adding less jalapeno than you think you need – perhaps just half of a small one, especially if you remove the seeds and membranes (where most heat resides). Blend the crema, then taste it. You can easily blend in more chopped jalapeno if you desire more heat, but it’s impossible to remove it once it’s in there. Aim for a pleasant warmth that complements, rather than overwhelms, the peach and salmon.
- Assembly & Serving Smarts: Soak Skewers & Serve Promptly: If using wooden or bamboo skewers, remember to soak them in water for at least 30 minutes before threading. This prevents them from catching fire or burning excessively on the hot grill. When assembling, alternate ingredients colourfully and snugly, but avoid packing them so tightly that heat can’t penetrate. Once cooked, let the skewers rest for just a minute or two before serving. Serve them warm, generously drizzled with the chilled crema – the temperature contrast is part of the delightful experience. Have extra crema available on the side for dipping.
By keeping these tips in mind, you’ll navigate potential pitfalls and ensure your Peach Salmon Skewers are perfectly cooked, beautifully balanced, and utterly delicious every time.
Frequently Asked Questions (FAQ) – Peach Salmon Skewers
Here are answers to some frequently asked questions about making and adapting this Peach Salmon Skewers recipe:
- Q: Can I use a different type of fish or protein?
- A: Yes, this recipe is quite adaptable! Firm, white fish like halibut, swordfish, or mahi-mahi would work well, though cooking times might need slight adjustment based on thickness. Large shrimp or scallops are also excellent choices – thread them onto skewers and reduce grilling time significantly (shrimp take only a few minutes per side). Chicken breast or pork tenderloin, cut into cubes, could also be used, but they would require a longer marinating time (at least 30 minutes for chicken, maybe longer for pork) and potentially a longer cooking time to ensure they are cooked through. Adjust marinade flavours slightly if desired for chicken or pork (e.g., add smoked paprika).
- Q: I don’t have an outdoor grill. What’s the best alternative cooking method?
- A: You have a couple of good options:
- Oven Broiler: This method gets closest to the char of grilling. Arrange skewers on a foil-lined baking sheet and place them under a preheated high broiler, about 6 inches from the heat source. Broil for 4-6 minutes per side, watching very carefully to prevent burning, until the salmon is cooked through.
- Stovetop Grill Pan: A cast iron or non-stick grill pan heated over medium-high heat can also work. Make sure the pan is hot and lightly oiled. Cook skewers in batches if necessary to avoid overcrowding, for about 4-6 minutes per side. You’ll get nice grill marks, though less smoky flavour than an outdoor grill.
- Baking: While you won’t get char, baking at 400°F (200°C) on a lined baking sheet for 10-15 minutes (turning once) will cook the skewers effectively.
- A: You have a couple of good options:
- Q: Can I make the Peach Jalapeno Crema dairy-free or vegan?
- A: Absolutely! To make the crema dairy-free, substitute the sour cream or Greek yogurt with a plain, unsweetened dairy-free alternative like coconut yogurt, almond milk yogurt, or cashew cream. Cashew cream (made by soaking raw cashews and blending them with water) provides a particularly rich and neutral base. Ensure the yogurt alternative is unsweetened to avoid adding unwanted sugar. If making the entire dish vegan, you’d also need to substitute the salmon with a plant-based alternative like firm tofu cubes (pressed well), large chunks of halloumi-style vegan cheese (if available), or extra vegetables like zucchini and mushrooms. Marinate the tofu similarly to the salmon.
- Q: Can I use frozen or canned peaches if fresh aren’t available?
- A: You can, but with caveats.
- Frozen Peaches: Thaw them completely first. They might be softer than fresh, firm peaches, making them slightly more delicate on the skewers. Pat them dry well before threading. They work perfectly well for the crema.
- Canned Peaches: These are generally packed in syrup and are much softer, making them less ideal for grilling on skewers as they may fall apart. If you must use them for skewers, choose peaches packed in juice (not heavy syrup), drain them very well, pat dry, and handle gently. Canned peaches can work in the crema, but drain them thoroughly and you might need less added sweetness (if any) and potentially more lime juice to balance the flavour. Fresh peaches are strongly recommended for the best texture and flavour balance in this recipe, especially for the skewers.
- A: You can, but with caveats.
- Q: How far in advance can I prepare the components, and how do I store leftovers?
- A:
- Advance Prep: The Peach Jalapeno Crema can be made 1-2 days ahead and stored covered in the fridge. The vegetables (onion, bell pepper) can be chopped a day ahead. Assemble the skewers just before grilling, especially after adding the salmon to the marinade (only 15-20 min marinating time needed). Do not marinate salmon overnight.
- Leftovers: Store leftover cooked skewers and crema separately in airtight containers in the refrigerator. The skewers are best eaten within 1-2 days. Reheat gently in the microwave, oven, or on a skillet to avoid drying out the salmon (or enjoy them cold over a salad). The crema should be good for 2-3 days. Note that the texture of the cooked peaches might soften further upon reheating.
