Dividing the cheese, using some in the filling and some on top of the burritos before baking, ensures cheesy goodness both inside and out.

    • Salsa (1 cup, your favorite kind): Salsa adds a burst of fresh, vibrant flavor and moisture to the burrito filling. Use your favorite type of salsa – mild, medium, or hot, depending on your spice preference. Pico de gallo, salsa verde, or a classic tomato-based salsa all work well. The salsa adds acidity, sweetness, and a touch of heat, balancing the richness of the beans and cheese.

    • Optional Toppings (for serving): Sour cream, guacamole, chopped cilantro, hot sauce, extra salsa, shredded lettuce, chopped tomatoes, olives, pickled jalapenos – these are all optional toppings to customize your burritos and add extra flavor and freshness when serving. Having a variety of toppings available allows everyone to personalize their burritos to their liking.


Instructions

Step 1: Prepare the Filling Base

    • Heat a tablespoon of olive oil or cooking oil in a large skillet over medium heat.

    • Add the chopped onion and bell pepper to the skillet and sauté for about 5-7 minutes, or until softened and slightly translucent. Stir occasionally to prevent sticking and ensure even cooking. Sautéing the onions and peppers first mellows their flavor and creates a more flavorful base for the filling.

Step 2: Add Beans, Corn, and Spices

    • Add the rinsed and drained black beans and pinto beans to the skillet with the onions and peppers.

    • Add the corn kernels (frozen or drained canned corn) to the skillet.

    • Stir in the chili powder, cumin, smoked paprika, garlic powder, and onion powder. Use the following amounts as a guideline, and adjust to your taste:
        • 2 tablespoons chili powder

        • 1 tablespoon cumin

        • 1 teaspoon smoked paprika

        • 1 teaspoon garlic powder

        • 1 teaspoon onion powder

    • Cook and stir the spices with the vegetables and beans for about 1-2 minutes, until fragrant. Toasting the spices briefly enhances their flavor and aroma.

Step 3: Add Rice, Broth, and Salsa

    • Add the cooked rice to the skillet with the bean and vegetable mixture.

    • Pour in the vegetable broth and salsa.

    • Stir everything together well to combine all the ingredients and ensure the spices and salsa are evenly distributed.

    • Bring the mixture to a simmer, then reduce heat to low, cover the skillet, and let it simmer for about 10-15 minutes, or until most of the liquid is absorbed and the filling has thickened slightly. Simmering allows the flavors to meld together and the filling to become more cohesive. Stir occasionally to prevent sticking.

Step 4: Stir in Cheese (Partially)

    • Remove the skillet from the heat.

    • Stir in about 1 cup of the shredded cheese into the filling. Reserve the remaining 1 cup of cheese for topping the burritos later. The cheese in the filling adds creaminess and flavor from the inside out.

    • Stir until the cheese is melted and incorporated into the filling.

    • Taste the filling and adjust seasoning with salt and pepper as needed. You may also want to add a little extra chili powder or cumin to taste.

Step 5: Assemble the Burritos

    • Preheat your oven to 375°F (190°C).

    • Lightly grease a 9×13 inch baking dish or casserole dish.

    • Warm the flour tortillas slightly to make them more pliable (optional, but recommended). You can warm them in a dry skillet for a few seconds per side or microwave them briefly.

    • Place a tortilla on a clean surface.

    • Spoon about 1/2 to 3/4 cup of the filling onto the center of the tortilla. Don’t overfill the tortillas, as they will be difficult to roll and may burst during baking.

    • Fold in the sides of the tortilla over the filling, then roll it up tightly from the bottom, burrito style.

    • Place the rolled burrito seam-down in the prepared baking dish.

    • Repeat with the remaining tortillas and filling, arranging the burritos snugly in the baking dish.

Step 6: Bake the Burritos

    • Once all the burritos are rolled and placed in the baking dish, sprinkle the remaining 1 cup of shredded cheese evenly over the tops of the burritos.

    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden brown, and the burritos are heated through and slightly crispy on the edges. Baking time may vary depending on your oven.

Step 7: Serve and Enjoy!

    • Remove the baking dish from the oven and let the burritos cool for a few minutes before serving. They will be very hot straight from the oven.
