For the Salad:
- Mixed Salad Greens: 5-6 cups of mixed salad greens. Use a variety of greens for texture and flavour, such as romaine lettuce, spinach, arugula, butter lettuce, or spring mix. Baby spinach, kale, or even shredded cabbage can also be incorporated for added nutrients and crunch.
- Cucumber: 1 medium cucumber, thinly sliced or diced. Cucumber adds a refreshing coolness and crispness to the salad. English cucumber (seedless) or Persian cucumbers are good choices.
- Tomatoes: 1 cup cherry tomatoes or grape tomatoes, halved or quartered. Tomatoes provide sweetness, acidity, and juiciness. Heirloom tomatoes, if in season, offer a burst of flavour and colour.

- Red Onion: 1/4 red onion, thinly sliced or finely chopped. Red onion adds a pungent bite and flavour. Soaking the sliced red onion in cold water for 10 minutes can mellow its sharpness if you prefer a milder flavour.
- Carrot: 1 medium carrot, grated or julienned. Carrots add sweetness, crunch, and vibrant colour.
- Optional Vegetables: Feel free to add other vegetables based on your preference and seasonal availability. Some great additions include:

Step 2: Grill the Paneer (Achieving Smoky Perfection)
- Preheat Grill: Preheat your grill to medium-high heat. If using a gas grill, preheat for about 10-15 minutes. If using a charcoal grill, wait until the coals are glowing and covered with white ash. Alternatively, you can use a grill pan on the stovetop if you don’t have an outdoor grill.
- Prepare Grill Surface: Lightly oil the grill grates to prevent the paneer from sticking. You can use cooking spray or brush the grates with olive oil.
- Grill the Paneer: Carefully place the marinated paneer cubes onto the preheated grill. Grill for 2-3 minutes per side, or until they develop grill marks and are lightly golden brown. Turn them gently using tongs to ensure even grilling on all sides. Be careful not to overcook the paneer, as it can become rubbery if grilled for too long. - Combine Dressing Ingredients: In a small bowl or jar, whisk together the olive oil, lemon juice, honey or maple syrup (if using), Dijon mustard, dried oregano or Italian herbs, salt, and black pepper.
- Emulsify Dressing: Whisk vigorously until the dressing is well emulsified and slightly thickened. If using a jar, you can simply close the lid tightly and shake well to emulsify the dressing.
- Taste and Adjust: Taste the dressing and adjust seasonings as needed. You may want to add more lemon juice for extra tanginess, honey for sweetness, or salt and pepper to taste.
Step 4: Assemble the Salad (Layering Textures and Flavours)
- Prepare Salad Greens: In a large salad bowl, place the mixed salad greens.
